Question from a student
I am a student of FNSC3180. I would like to ask about questions concerning the features of the bacteria. While I am doing revision, I discovered that the information provided by the lecture notes, mindmap drawn during the lecture, the textbook and also other information from the internet are not the same, especially concerning the incubation period and the infectious dose. Would you mind telling me which source(s) should I rely on, or in fact both of them would be accepted? Thank you very much.
A:
As I have mentioned in the class, the incubation periods of bacterial diseases are always approximations, depending on many factors. So the numbers you read in different sources are all true under their specific conditions. I will not ask the exact numbers of hours or days of the incubation periods in examinations.

Escherichia coli
- -EAEC, EHEC, EIEC, EPEC, ETEC, DAEC, STEC
- and the German "hybrid" of EAEC/EHEC
Vibrio parahaemolyticus
Campylobacter jejunii
Shigella species
Listeria monocytogenes
Clostridium perfringenes
Clostridium botulinum
Bacillus cereus
Staphylococcus aureus
You should know their characteristics, e.g. Disease incubation period, pH range, temperature range, and so on.
You should also know the foods and special features closely related to these microorganisms.

賀年食品調查
Seasonal Food Surveillance Project on Lunar New Year Food
中心最近完成一項賀年食品時令食品調查,從不同零售商(包括網上零售商)抽取了糕點(如蘿蔔糕和年糕)、油器(如煎堆和油角)、糖果、湯圓、瓜子及海味等樣本,除進行化學及微生物測試外,亦包括營養成分測試,有關調查的詳情及結果已上載於中心網頁。
The CFS has recently completed a seasonal food surveillance project assessing the food safety on Lunar New Year (LNY) food. Different types of LNY food, including steamed puddings (e.g. turnip puddings and festive cakes), fried dumplings (e.g. sesame balls and crispy triangles), candied fruits, glutinous rice balls, melon seeds and dried aquatic products were collected from different retailers (including online retailers). In addition to carrying out chemical and microbiological tests, the CFS also conducted nutrition content analysis of food samples. Details and results have been uploaded onto the CFS website.

List of Small Volume Exemption Products
根據小量豁免制度,在香港每年銷售量不超過30,000件的相同版本預先包裝食物,可獲授予營養標籤豁免。有關豁免產品名單已上載中心網頁。
Under the Small Volume Exemption (SVE) Scheme, prepackaged foods of the same version with annual sales volume in Hong Kong not exceeding 30,000 units may be granted with exemption from providing nutrition labelling. List of SVE products has been uploaded onto the CFS website.

Roving Exhibition on Food Safety
2月下旬的巡迴展覽內容包括營養標籤、雪卡毒素、有機食物、控制食物温度及預防食物交叉污染。展覽將設於北區政府合署及元朗大橋街市。
The coming exhibitions will be held in late February at North District Government Offices and Yuen Long Tai Kiu Market. Panels cover topics on Nutrition Labelling, Ciguatoxins, Organic Food, Control of Food Temperature and Prevention of Cross-contamination.

2015年12月份食物安全報告及2015年食物監察計劃全年總結
Food Safety Report for December and summary of food surveillance programme for 2015
中心會每月公布「食物安全報告」,分析當月的食品監察結果,令市民可適時地獲得最新的食物安全資訊。
As a way to deliver the latest food safety information timely to the public, the CFS releases the "Food Safety Report" every month, giving an account of the food surveillance sample result analyses.
總結二零一五年食物監察計劃,整體合格率為百分之九十九點七,與近年情況相若,顯示本港的食物安全一直維持在高水平。
Concluding the food surveillance programme for 2015, the overall satisfactory rate was 99.7 per cent, which was comparable to the results in recent years. This indicates that food safety has been maintained at a high standard in Hong Kong.

2月的巡迴展覽內容包括孕婦食物安全建議、有機食物、殘餘獸藥、營養標籤、殘餘除害劑、反式脂肪、雪卡毒素、控制食物温度及預防食物交叉污染。展覽將設於新灣仔街市、紅磡街市、北區政府合署及元朗大橋街市。
The coming exhibitions will be held in February at New Wan Chai Market, Hung Hom Market, North District Government Offices and Yuen Long Tai Kiu Market. Panels cover topics on Food Safety Ordinance, Organic Food, Veterinary Drug Residues, Nutrition Labelling, Pesticide Residues, Trans Fats, Ciguatoxins, Control of Food Temperature and Prevention of Cross-contamination.
