2016年12月份食物安全報告及2016年食物監察計劃全年總結
Food Safety Report for December and Summary of Food Surveillance Programme for 2016

中心會每月公布「食物安全報告」,分享食物監察結果,令市民可適時地獲得最新的食物安全資訊。
此外,總結2016年食物監察計劃,整體合格率為99.8%,與近年情況相若,顯示本港的食物安全一直維持在高水平。
As a way to deliver the latest food safety information timely to the public, the CFS announces the "Food Safety Report" every month, sharing the food surveillance results.
Besides, concluding the food surveillance programme for 2016, the overall satisfactory rate was 99.8%, which was comparable to the results in recent years. This indicates that food safety has been maintained at a high standard in Hong Kong.

肉類添加二氧化硫專項食品調查
Targeted surveillance on use of sulphur dioxide in meat

中心公布肉類添加二氧化硫專項食品調查結果。在約六百個肉類樣本中,除十個樣本驗出含有不准在新鮮肉類中使用的二氧化硫外,其餘樣本全部通過檢測,整體合格率為百分之九十八點三。
CFS released the test results of a targeted food surveillance project assessing the use of sulphur dioxide in meat. Among some 600 samples tested, 10 samples were found to contain sulphur dioxide, a non-permitted preservative in fresh meat, while all remaining samples were satisfactory. The overall satisfactory rate was 98.3 per cent.

Salmonella in Chicken and Man

Dear students,

Some points on the Salmonella puzzle of chicken and man:

1. Salmonella Gallinarum (SG), S. Pullorum(SP), and S. Enteritidis(SE) share O9:O12 antigens; S. Typhimurium (ST) has O4:O5:O12
2. O9 antigen can induce many more antibodies than O12. So O12 antibodies in the chicken infected by SG or SP would protect the chicken from SE infection but not from ST infection.
3. SE do not affect the health of the Chicken too much that it is difficult to look for sick chicken infected by SE and remove them.
4. SE and ST can be carried by rodents (rats, mice, etc.)…removing sick chicken cannot help too much.
5. Vaccination is the best way to control SE and ST.

Question:

Dear Professor Kwan,

I am writing to ask about the serotype of Salmonella. As you said and drew in class, the cross protection between Salmonella Pullorum and Enteritids are from the antibodies toward O4, O5, O12 antigen. As the picture shown below:

I want to ask about the serotype, as I read about the supplementary notes posted on blackboard “Tracing the Origin of Salmonella Outbreak”, it showed that the antigen of Salmonella Pullorum , Gallinarumor and Enteritids are having O9 and O12 antigen. Is that those Salmonella consist of O9 & O12?

Answer:

Yes,  you are right. I have got them mixed up. The important point here is that S. Pullorum, S. Gallinarum and S. Enteritidis shared the same O antigens (O9:O12), and their antigens are not identical to those of S. Typhimurium (O4:O5:O12).

  3. duration: 11:30am to 12:30pm, one hour examination

Results of Compliance Test for Nutrition Labelling and Declaration of Allergens for December 2016

為確保預先包裝食品符合《食物及藥物(成分組合及標籤)規例》,中心自2012年起,一直有抽取預先包裝食物的樣本作檢測,其中包括檢測營養素含量及致敏物。2016年12月份有關營養素含量及致敏物檢測結果的報告,已上載到中心網頁。
The CFS has been testing, among other things, nutrients and allergens in prepackaged food samples for compliance under the Food and Drugs (Composition and Labelling) Regulations since 2012. Monthly Report on Results of Compliance Test for Nutrition Labelling and Declaration of Allergens under the Regulations for December 2016 has been uploaded onto the CFS website.
