Theme Exhibitions in Communication Resource Unit

中心轄下的傳達資源小組於4月至6月舉辦「營養標籤多面睇」及「食物中的天然毒素」展覽。展覽活動包括播放教育短片及設置展板讓市民增加對食物安全的認識,更備有各種食物安全宣傳單張供公眾取閱。小組位於九龍旺角花園街市政大廈8樓,歡迎到場觀賞。
The Communication Resource Unit (CRU) of the CFS will organize exhibitions on the theme of "Have a Close Look at Nutrition Labelling" and "Natural Toxins in Food" from April to June. The exhibitions include short food safety and education videos and exhibition boards to enrich the public's knowledge on food safety. You are welcome to join us at the CRU at 8/F, Fa Yuen Street Municipal Services Building, Mongkok, Kowloon.

已獲小量豁免產品名單
List of Small Volume Exemption Products

根據小量豁免制度,在香港每年銷售量不超過30,000件的相同版本預先包裝食物,可獲授予營養標籤豁免。有關豁免產品名單已上載至中心網頁。
Under the Small Volume Exemption (SVE) Scheme, prepackaged foods of the same version with annual sales volume in Hong Kong not exceeding 30,000 units may be granted with exemption from providing nutrition labelling. List of SVE products has been uploaded onto the CFS website.

I am Chau Mei Ling from FNSC3180. I have seen the revised answer posted on blog. But I thought the answer should be 0.25mins* 10^-1.5. It is becasue that is a log scale. 1 log = 10^1, 2 log = 10^2. Then, is it 1.5 log = 10^1.5? Thanks a lot.


Answer

You are correct. But I accept approximation, so 1.5 log reduction can be calculated as reduction of 1.5*10 as approximation. The straight answer should be 0.25min/10^1.5 but I accept 0.25min/15 using approximation.

Subject: FNSC 3180: question about 14-15 final exam QB4

Dear Professor Kwan,

I am SSSSSS from FNSC3180. You have mentioned last year exam paper question B4 on Thursday and I am confused about the answer of (e). When calculating  the D value of bacteria at 120C, 0.25min/1.5 is used. May I know that whether this is the final answer or only a step of the solution? Because I thought the equation: DT2=DT1*10[T1-T2/Z] (which was mentioned on page 62 of the note) should be used to calculate the D value of bacteria at 120C. However, if this equation is used, it will be difficult to calculate without using calculator. Could you explain how to calculate the D value of bacteria at 120C? Thank you very much.

Sorry that I made a mistake when I did the calculation. the D value of bacteria at 120C should be   0.25 min/15, because the reduction should be 1.5 log. the approximation of 1.5 log is 15. You do not need to use the equation. It is only an approximation but I accept that as the final answer.

From part (a) results, sushi get the loest difference rate -29%, it means that Vibrio parahaemolyticis is not included in this outbreak.

The incubation period  is 5-9 hour.
Pizza get a highest rate difference 25.4% , and the laboratory test small amount of bacillus cereus in the bread. The incubation period of bacillus is 1-6 , 8-16 hour, which match the attack time of patients. They also had the symptoms of diarrhea and vomiting. Since the bread is left at room temp. without refrigerated for a period of time, it has a high chance for bacillus proliferate.

Answer

You need to make your deduction with consideration of all information. The food impact analysis implied Pizza to be the source of the outbreak. So you need to see whether there is any other information supporting that. Although B. cereus in bread was detected and the incubation period fitted but the bread was clearly not implicated by the food impact analysis, it was probably some other pathogen was responsible. In this case, we can suggest that Staphylococcus aureus was responsible, because it may not be detectable in the implicated food, in thsi case, pizza, and the incubation period was consistent. 

You can get good marks if you discuss the whole scenario with good justification. Sometimes, the answer to the question may not be perfect, but that occurs in real life like that all the time.

You can certainly answer "compare and contrast" questions in this way. But it is NOT PREFERRED. "compare and contrast" is not equal to "listing similarities and differences".

I am a student from FNSC 3180. During the review session,you said we should use both deduction and elimination method to describe the outbeark to get the full marks. But I do not quite understand the differences between deduction method and elimination method. Don't they both knock out the pathogens that impossibly cause the outbreak?Could you explain more?

Answer

I use a very loose way to mention deduction and elimination. What I meant was that most students would just describe the deduction of only one pathogen to be most likely be the implicated pathogen to cause the outbreak, but not writing down the elimination of the other pathogens observed in the outbreak analysis. Answers that include both would be considered complete and would be awarded with higher marks than just describing only the deduction of one putative pathogen.

Only the pages related to the topics I covered in lectures will be included in the final examination.

About outbreak analysis questions

You would probably use a deduction approach to find the pathogen most probably related to the outbreak. But don't take the other pathogens appearing in the outbreak for granted. You should try to eliminate them as not probably related to the outbreak. Get full marks by more thorough analysis by using both deduction and elimination.

No, they will not be included. The final examination covers only the parts I taught in the lectures

Q:

I am a student from FNSC31810 this semester, I would like to know

1. what formats of the questions will be included in the final exam? is it similar to the past exams? 

2.from the epidemiological exercise (the one on page 49 of the supplementary note, about picnic and Clostridium perfrigens), in part d, it was asked to ans the transmission of the C.perfrigens,

My ans: C.perfringens are existing in the turkey stuffing and enter the human body by oral route. Is it enough? or should I need to explain about how it infects the intestinal cells and cause intoxification?

3.in part e, what should be included in the scenario? 


my ans would include the inproper handling of the vegetables (not wash throughly) so C.perfringens are still there, and the temperature (without refrigeration) is suitable for the growth of C.perfringens, so pre-formed toxins are existing and consumed by human, the toxins affect the intestinal cells and stimulate the synthesis of cAMP and cGMP, cause reversal of ion and water absorption process so ions and water are lost and resulting in diarrhea.

Ans:

1. Essay and problem-solving question. Yes, they are similar to past examinations.

2. No, you do not need to discuss the pathology.   You would need to discuss the disease path with C. perfringens endospores in the stuffings germinate and grow. It is not fecal-oral. 


3. Yes, you should suggest how the turkey was prepared and the possible mishandling of the turkey providing opportunity for C. perfringens to grow. You The focus should be on food safety rather than pathology. C. perfringens causes a combination of infection and intoxication.

2016年2月份預先包裝食物之營養素含量及致敏物檢測結果
Results of Compliance Test for Nutrition Labelling and Declaration of Allergens for February 2016

為確保預先包裝食品符合《食物及藥物(成分組合及標籤)規例》,中心自2012年起,一直有抽取預先包裝食物的樣本作檢測,其中包括檢測營養素含量及致敏物。2016年2月份有關營養素含量及致敏物檢測結果的報告,已上載到中心網頁。
The CFS has been testing, among other things, nutrients and allergens in prepackaged food samples for compliance under the Food and Drugs (Composition and Labelling) Regulations since 2012. Monthly Report on Results of Compliance Test for Nutrition Labelling and Declaration of Allergens under the Regulations for February 2016 has been uploaded onto the CFS website.

食物安全巡迴展覽
Roving Exhibition on Food Safety

4月的巡迴展覽內容包括食物安全5要點、預防食物交叉污染、有機食物、營養標籤、雪卡毒素、殘餘除害劑、基因改造食物、食物安全條例及反式脂肪。展覽將設于灣仔黃泥湧街市、黃大仙大成街街市、東湧富東邨富東廣場及電氣道街市。
The coming exhibitions will be held in April at Wong Nai Chung Market in Wan Chai, Tai Shing Street Market in Wong Tai Sin, Fu Tung Plaza in Tung Chung and Electric Road Market. Panels cover topics on 5 keys to food safety, prevention of cross-contamination, organic food, nutrition labelling, ciguatoxins, pesticide residues, genetically modified food, Food Safety Ordinance and trans fat.
