(1)   非洲豬瘟與食物安全

 

非洲豬瘟是嚴重的豬隻病毒性疾病,具高度傳染性,但不會感染人類,也無食物安全風險。世界動物衞生組織指出,非洲豬瘟對人類健康並不構成威脅。

 

市民應向可靠的持牌店鋪購買肉類。如未能提供官方衞生證明書,切勿攜帶野味、肉類、家禽或蛋類入境。而豬肉必須徹底煮熟才可食用,因為未經煮熟的豬肉可能含有食源性病原體。

(2)   慎防生蠔存有的風險

 

供生吃的蠔在進食前沒有經過加熱處理殺死病原體,因此是高風險食物。除了活蠔以外,市面可供市民購買的生蠔往往是預先去殼的冷藏或冰鮮生蠔,處理不當可導致細菌污染及蠔隻變壞。

 

孕婦、嬰幼兒、長者和免疫力弱人士應避免進食生或未煮熟的蠔。

(3)       食安中心公布二○二二年十二月份食物安全報告及二○二二年食物監測計劃全年總結

 

中心每月公布「食物安全報告」,分享食物監測結果,令市民可適時獲得最新的

食物安全資訊。中心並總結二○二二年食物監測計劃,除日常食品監測外,亦進行多項專項食品、時令食品及普及食品調查。

(4)   網購的安全風險

 

近年在網上購買食物愈趨普遍,透過網站或流動應用程式訂購食品或外送餐點確實方便。不過,消費者在網購食物,尤其是高風險限制出售的食物時要留神,最好先核實商戶的牌照/許可證資料才下單,食物安全才更有保障。

(1)   African Swine Fever (ASF) and Food Safety

 

African Swine Fever (ASF) is a severe, highly contagious, viral disease affecting pigs, but it does not infect humans and poses no food safety risk. According to the World Organisation for Animal Health, ASF is not a human health threat.

 

The public should purchase meat from reliable and licensed premises and do not bring any game, meat, poultry or eggs into Hong Kong without official health certificates. Pork should always be fully cooked before consumption as undercooked pork may harbour foodborne pathogens.

(2)   Beware of the Inherent Risks of Raw Oysters

 

Oysters for raw consumption are a high-risk food as there is no heat treatment to kill pathogens before eating. Besides those sold alive, raw oysters available in the local market are often pre-shucked in either frozen or chilled forms. If not handled properly, it can lead to bacterial contamination and deterioration of the shellfish.

 

Pregnant women, infants and young children, the elderly and people with weakened immunity should avoid consuming raw or undercooked oysters.

(3)   CFS announces food safety report for December 2022 and summary of food surveillance programme for 2022

To deliver the latest food safety information timely to the public, the CFS announces the

monthly “Food Safety Report”, sharing the food surveillance results. The CFS also concludes the food surveillance programme for 2022. Apart from routine food surveillance, the CFS also conducted a number of targeted, seasonal and popular food surveillance projects.

(4)   Online Shopping of High-risk Restricted Foods

 

Online food shopping has become more popular in recent years, and it is rather convenient to order food or have meals delivered via websites or mobile apps. Consumers, however, should exercise caution when purchasing food online, particularly high-risk (restricted) foods. It is best to double-check the licence/permit details of the food premises before placing an order for ensuring food safety.

(5)   Roving Exhibitions on Food Safety

 

The roving exhibitions will be held in February 2023 at Shek Wu Hui Market, Tai Kiu Market, Shek Tong Tsui Market and Cheung Sha Wan Government Offices. Panels cover topics on Enhance Food Traceability, Strengthen Food Safety, Pesticide Residues, Trans Fats, Nutrition Labelling, Genetically Modified Food, Take Notice of Eating Scallops and Avoid Consuming Puffer Fish.

(1) How Guidelines on Food Safety and Hygiene for Vending Industry

Food vending machines provide a convenient way for customers to buy food. In recent years, there has been a boarder range of foods sold by means of a vending machine which are relatively new to the local market. Food safety is important for vending operators, and high standards of food hygiene reduce the risk of food poisoning from spoiled food or food contamination. This guideline has been prepared to help the trade to ensure that a hygienic product is delivered to the consumer from vending machines.

(2) Lap-mei (Chinese Preserved Meat) and Food Safety

Lap-mei is a favourite food of many people, distinctive for its colour, aroma and taste.  There are three types of lap-mei available on the local market.  They are preserved Chinese sausages, preserved pork, and preserved ducks.  If trying to prepare home-made lap-mei, food safety concerns may be raised.

Some of the curing ingredients used to prepare lap-mei (e.g. salt) have antimicrobial functions while sodium nitrate/nitrite can also inhibit the growth of Clostridium botulinum and its toxin production.  Improper conditions in processing of lap-mei may lead to food deterioration due to bacterial growth, and may affect health after consumption.  However, it is worth noting that Clostridium botulinum may grow in oxygen free and low acid food (such as home-made Chinese sausages) and produce lethal toxin without causing noticeable deterioration in the food.

Members of the public should buy lap-mei from reliable retailers, maintain a balanced diet and avoid excessive consumption of lap-mei (especially for individuals with diabetes, heart disease and high cholesterol).  In addition, infants are highly susceptible to nitrite toxicity and should avoid consuming lap-mei.  The intake of lap-mei among young children should also be restricted.

(1) 售賣機行業的食物安全及衞生指引

售賣機讓顧客得以便捷的方式購買食物。近年,售賣機發售更多種類新進入本地市場的食品。食物安全對售賣機營運者來說十分重要。嚴格的食物衞生標準能減少食物變壞或受污染所出現的食物中毒風險。本指引旨在協助業界確保售賣機售予消費者的產品合乎衞生。

(2) 臘味與食物安全

臘味有其獨特的色香味,是不少市民喜愛的食物。常見的臘味有臘腸、臘肉及臘鴨等。市民如嘗試在家中自製臘味,可引起食物安全的疑慮。

有些製造臘味用的醃料(如鹽)可防止細菌滋生,而硝酸鈉/亞硝酸鈉更可防止肉毒桿菌滋生及抑制其毒素的產生。不過,若製作過程不當,可能導致細菌滋生,令臘味變壞,進食後有可能影響健康。值得注意的是,肉毒桿菌可在沒有氧氣及低酸性的食物(如自製臘腸)內滋生,並產生致命毒素,但不會令食物明顯變壞。

市民應向可靠的供應商購買臘味,並注意均衡飲食,不宜過量進食臘味。患有糖尿病、心臟病及高膽固醇的人更應節制。嬰兒較易亞硝酸鹽中毒,所以不宜食用臘味;小孩也不宜多吃。
