(1) 生蠔與食物安全
冬季是傳統的吃蠔旺季。蠔的吃法五花八門,酥炸、火鍋等不一而足。蠔因為其生長特性而較易受病原體(包括細菌和病毒)及化學污染物污染。假如進食了受病原體污染的生蠔,可引致食物中毒,危害健康。

(2) 火鍋的食物安全建議
在冬日有點寒風的日子,一家人圍在一起烹煮喜歡的食物,談喜歡的話題,邊吃邊聊,其樂融融。要食得滋味同吃得健康,在家中煮火鍋時要小心選擇材料,並保持食物及個人衞生。

此外,熱氣騰騰的火鍋亦是與朋友出外用膳的熱門選擇。火鍋的材料種類很多,消費者可隨個人喜好選擇合適的食物。不過,火鍋材料若未經妥善處理或徹底煮熟,進食的便可能不僅是食物,而是將可導致食物中毒的病毒或細菌亦一併吃進肚子裏。

(3) 加工肉類的鈉含量
加工肉類是指經過鹽漬、發酵或以其他增加口味或改善保存的方法處理過的肉類或內臟,例如火腿、香腸、鹹牛肉和肉乾等。國際癌症研究機構將加工肉類列為「令人類致癌」。另外,加工肉類普遍鈉含量高,攝入過量的鈉會增加患上高血壓的風險。因此,市民應避免進食過量加工肉類,並應保持均衡及多元化飲食,多吃蔬果。

(4) 盆菜微生物含量調查結果滿意
中心公布最近完成一項有關盆菜微生物含量的時令食品調查,三十個樣本全部通過檢測。

(1) Raw Oysters and Food Safety
Winter is the traditional season for savouring oysters. There are different ways to enjoy oysters, including deep fried, hot-pot. Due to their specific growing nature, oysters can be easily contaminated by pathogens (including bacteria and viruses) and chemical contaminants. Consumption of raw oysters contaminated with pathogens may cause food poisoning, affecting our health.

(2) Food Safety Tips for Hotpot
It is warm and cosy for a family to gather around a hotpot and have a nice little chat while cooking their favourite food in a chilly winter. The recipe for healthy and yummy hotpot includes careful choice of ingredients and good food and personal hygiene.

Also, hotpot is a popular choice when we dine out with friends. With a great variety of hotpot ingredients, consumers can choose whatever they like to eat. However, if hotpot ingredients are not handled properly or cooked thoroughly, we will ingest not only food but also viruses or bacteria that can cause food poisoning.

(3) Level of Sodium in processed meat
Processed meat refers to meat or offal that has been salted, fermented or transformed by other methods to improve preservation or enhance flavour, for example, sausages, corned beef, and jerky. The International Agency for Research on Cancer (IARC) has classified processed meat as "carcinogenic to humans" (Group 1). In addition, processed meat generally has relatively high levels of sodium and excessive sodium intake will increase the risk of developing hypertension. The public should avoid excessive consumption of processed meat and maintain a balanced diet by consuming a variety of food, including plenty of fruits and vegetables.

(4) Test results on microbiological quality of poon choi all satisfactory
CFS announced the test results of a recently completed seasonal food surveillance project on the microbiological quality of poon choi. Thirty samples were collected and all passed the tests.

(2) 以水存養進口生蠔是否適當?

 

在本地持續錄得由未經烹煮的蠔所引致的食源性疾病個案中,中心注意到,有些進口商把待售的進口生蠔重新浸入鹹水缸中存養。今年發生的數宗由擬供直接食用的生蠔所導致的食物中毒個案,便是涉及這種不當的處理方式。雖然原意是為了延長蠔的保質期,但這種暫存的方法卻會對消費者構成額外的食物安全風險。

(3) 食物安全中心公布火鍋食物專題調查結果

中心最近完成一項普及食品的專題調查,評估火鍋食物的食用安全。三百一十五個火鍋食物樣本全部通過檢測。

(4) 臘味時令食品調查結果滿意

 

中心在十一月二十二日公布,最近完成一項有關臘味的時令食品調查結果,約一百四十個樣本全部通過檢測。。

While the shellfish, often served uncooked, continues to appear in the records of local foodborne disease outbreaks, CFS notices that some importers re-immerse imported raw oysters into saltwater tanks before sale. Such improper handling of oysters intended for direct consumption was implicated in several food poisoning cases this year. With the intention of extending shelf-life of the shellfish, the temporary storage method may otherwise pose additional food safety risks to consumers.

(3)CFS announces test results on hot pot food samples

 

CFS announced the test results of a recently completed surveillance project assessing the food safety of hot pot cuisine. A total of 315 hot pot food samples were collected and all passed the tests.

(4) Test results of seasonal food surveillance project on lap-mei all satisfactory

 

CFS announced the test results of a recently completed seasonal food surveillance project on lap-mei on 22 November 2021. The test results of around 140 samples collected were satisfactory.

(1) 大閘蟹食物安全

(2) 燒烤肉類內PAHs的風險

PAHs在環境中無處不在,因此幾乎所有食物都含有PAHs。不過,未經烹煮的食物內含大量PAHs的情況並不常見。使用烘焗和燒烤等烹煮方法會產生更多的PAHs及增加食物中的PAHs含量;而燒焦食物含有較多PAHs。因此愛吃燒烤肉類的人可能會攝入較多的PAHs。

(1) Fresh Water Hairy Crabs and Food Safety

Autumn is the best season for savouring freshwater hairy crabs. They should not overindulge themselves with this cholesterol-rich cuisine. Hairy crabs may harbour parasites and pathogens. They should be cooked thoroughly before consumption.

(2) Risk of PAHs in Barbecued Meats

Since PAHs are ubiquitous in the environment, they are present in almost all food, although they are rarely found in high levels in raw foods. Cooking methods such as roasting and grilling, on the other hand, will generate more PAHs and result in higher levels of PAHs. Also, charred foods have a higher PAHs level. That said, people love barbecued foods may take in more PAHs.

(2)   生蠔與食物安全

 

天氣漸冷,冬季是傳統的吃蠔旺季。蠔的吃法五花八門,酥炸、火鍋等不一而足,而部份市民可能選擇享用生蠔。市民如選擇享用生蠔,應注意相關的風險。蠔因為其生長特性而較易受病原體(包括細菌和病毒)及化學污染物污染。假如進食了受病原體污染的生蠔,可引致食物中毒,危害健康。

(3)   培養肉

 

培養肉是近來越來越受到關注的話題。培養肉又稱實驗室培養肉、試管肉等,是以動物細胞培養技術生產的肉,擬用作傳統肉類食品的替代品。

 

現時本港未有培養肉發售。現今培養肉的生產技術仍然費用高昂,開發商需要繼續進行研發,進一步降低成本,使培養肉的大規模生產更符合經濟效益。在生產供人食用的培養肉時,開發商有責任確保產品可供人安全食用。

(4)   慎防與五指毛桃相似的有毒植物

 

五指毛桃為一種桑科植物的根部。雖然五指毛桃無毒,但由於在山野常與一些有毒植物(如斷腸草 - 一種有毒的馬錢科植物)同地生長,而且五指毛桃與這些有毒植物的外形相似,故採挖五指毛桃時,可能混入有毒的植物。香港過往亦有因進食懷疑摻雜了有毒植物的五指毛桃而導致中毒的事件發生。

(2) Raw Oysters and Food Safety

 

It is getting cold and winter is the traditional season for savouring oysters. There are different ways to enjoy oysters, including deep fried, hot-pot and some members of the public may choose to eat raw oysters. If consumers choose to eat raw oysters, they should be aware of the associated risk. Due to their specific growing nature, oysters can be easily contaminated by pathogens (including bacteria and viruses) and chemical contaminants. Consumption of raw oysters contaminated with pathogens may cause food poisoning, affecting our health.

To deliver the latest food safety information timely to the public, the CFS announces the monthly “Food Safety Report”, sharing the food surveillance results.

 

At present, cultured meat products are not yet commercially available in Hong Kong.  The current production technology is still costly and requires research and development to further reduce the cost and make large-scale production of cultured meat more economically viable. In producing cultured meat for human consumption, the developer has the responsibility for ensuring that the product is safe for human consumption.

(4) Beware of toxic plants resembling Radix Fici Simplicissimae

 

Radix Fici Simplicissimae is the root of a plant belongs to the Moraceae family. Although Radix Fici Simplicissimae is not toxic, it grows in the wild in areas where some toxic plants are prevalent, such as Gelsemium elegans (a toxic plant belongs to the Loganiaceae family). The appearance of these plant species is similar and may be mixed up during harvesting. In Hong Kong, there were poisoning cases involving consumption of Radix Fici Simplicissimae suspected to be contaminated with toxic plants.

(5) List of Small Volume Exemption Products

 

Under the Small Volume Exemption (SVE) Scheme, prepackaged foods of the same version with annual sales volume in Hong Kong not exceeding 30,000 units may be granted with exemption from providing nutrition labelling. List of SVE products has been uploaded onto the CFS website.

(1) 不要生吃淡水魚肉 慎防致病菌與寄生蟲

進食淡水魚生(中式魚生)或未徹底煮熟的淡水魚會感染寄生蟲(例如:中華肝吸蟲),亦有機會感染食源性病菌。過往,新加坡曾經發生多宗與生吃淡水魚有關的乙型鏈球菌感染個案。乙型鏈球菌可感染身體各部分,包括血液、肺部、骨頭和關節。

為保障公眾健康,根據《食物業規例》(第132X章),本港禁售中式魚生。消費者無論是在港或外遊,切勿進食生或未徹底煮熟的淡水魚。

預防食源性疾病,市民亦應注意個人、食物與環境衞生:
經常保持雙手清潔
適當處理好手部傷口才準備食材
生熟食物要分開擺放,並且用不同的刀具及砧板分開處理,避免交叉污染
徹底煮熟食物才進食

(2) 食物送遞商提供非食物送遞服務的食物安全問題

一些食物送遞商的上門送餐服務兼備非食品的外送服務,與非食品一起包裝的食物,在運送過程中可能會被微生物、滲漏或濺溢出來的非食用化學品或雜質所污染。此外,送遞時貯存溫度不當可能會導致食物滋生細菌和變壞。

(3) 加工肉類、紅肉與癌症

世界衞生組織(世衞)屬下的國際癌症研究機構(IARC)早前把加工肉類歸類為"令人類致癌"(第1組),每天食用50克加工肉類,患 大腸癌的風險將增加18%;吃得愈多,風險愈大。

有證據顯示,食物中的維他命C、鈣、葉綠素和多酚等成分能抑制N-亞硝基化合物或其他致癌物質的形成。世衞建議,多吃蔬果、少吃加工肉類和紅肉是預防多種癌症的重要一環。

(1) Do Not Eat Raw Freshwater Fish To Avoid Harmful Bacteria and Parasites

Consuming raw freshwater fish (Chinese Yu Sang) or eating raw or undercooked freshwater fish can be hazardous to be infected by parasites such as Chinese liver fluke, it can also infected by foodborne bacteria. In the past, there were outbreaks of Group B streptococcus (GBS) infections in Singapore which were associated with raw freshwater fish consumption. GBS can cause infections in different parts of the body including the bloodstream, lungs, bones and joints.

In order to protect public health, Chinese Yu Sang is a prohibited food under the Food Business Regulation (Cap 132X) in Hong Kong. Consumers are advised not to eat raw or undercooked freshwater fish while dining locally or travelling and eat freshwater fish only.

To prevent foodborne diseases, the public should also pay attention to personal, food an d environmental hygiene:
Always keep your hands clean
Prepare food only after proper handling of hand wounds
Store raw and cooked foods separately, and use different knives and cutting boards to handle them separately to avoid cross-contamination
Cook food thoroughly before eating

(2) Food Safety Issues of Food Delivery Agencies Providing Non-food Delivery Services
Some food delivery agencies provide door-to-door delivery of meal and non-food items. Packed together with non-food items, foods might risk contamination by microorganisms, the leakage or spillage of non-edible chemicals or foreign substances during transportation. Besides, delivering foods without time or temperature control can increase food safety risk. While minima lly affecting non-food items, delivery without proper holding temperatures could lead to bacterial growth and deterioration in food.

(3) Processed Meat, Red Meat and Cancer

The International Agency for Research on Cancer (IARC), the cancer research arm of the World Health Organization (WHO) has classified processed meat as "carcinogenic to humans" (Group 1). Each 50g portion of processed meat consumed daily can increase the risk of colorectal cancer by 18%. The risk increases with the amount of meat consumed, but no "safe" level can be devised.

There is evidence that certain components from food, e.g. vitamin C, calcium, chlorophylls, polyphenols, etc., can inhibit the formation of N-nitroso compounds or other cancer c ausing agents. As a major prevention strategy against many cancers, the WHO recommends eating more vegetables and fruits but less processed meat and red meat.

(1)  進食大閘蟹安全小貼士

大閘蟹當造季節快到了,令愛蟹之人食指大動。不少南貨店、超級市場和食店都以應時「大閘蟹」作招徠,令人難以抗拒,不過在享用這道含高膽固醇的菜肴時,切記要適可而止。由於大閘蟹可能含有寄生蟲及致病菌,所以要徹底煮熟才可進食。

為保障食物安全,市民應光顧可靠及領有介貝類水產動物(大閘蟹)售賣許可證的商戶。有關許可證的規定,所有供出售的大閘蟹必須附有由來源地發證實體簽發的衞生證明書以及漁農自然護理署發出的證明書。

(1) Safety Tips for Consuming Fresh Water Hairy Crabs

The best season for savouring freshwater hairy crabs is coming, bringing great enjoyment to gourmets. In many groceries, supermarkets and restaurants, this seasonal food is showcased prominently to entice customers. Some members of the public find this delicacy irresistable. However, they should not overindulge themselves with this cholesterol-rich cuisine. Hairy crabs may harbour parasites and pathogens. They should be cooked thoroughly before consumption.

To ensure food safety, the public are advised to buy hairy crabs from reliable shops with Shell Fish (Hairy Crab) Permit. The permit requires the hairy crabs for sale must be accompanied by health certificates issued by issuing entities of countries of origin and certificate(s) issued by the Agriculture Fisheries and Conservation Department.

(2) Don’t Eat or Serve Chinese Yu Sang (Raw Fish)

Consuming Chinese Yu Sang (raw freshwater fish) can be hazardous to health. Apart from bacteria, it is well known that raw freshwater fish including grass carp, bighead carp or snakehead may carry parasites such as Chinese liver fluke which can cause obstruction, inflammation and cancer of the biliary ducts in the liver. In order to protect public health, Chinese Yu Sang is a prohibited food under the Food Business Regulation (Cap 132X) in Hong Kong. Consumers are advised not to eat raw or undercooked freshwater fish while dining locally or travelling and eat freshwater fish only if it is adequately cooked, especially when having hot pot or congee.

(3) The CFS Foodsafe Movie Channel

(4) CFS announces results of seasonal food surveillance on mooncake (first and second phase)

The CFS announced the results of a seasonal food surveillance project on mooncakes. The results of 138 and 162 samples tested in the first and second phase respectively were all satisfactory.
