(1)   蛋及蛋製品給食物業的食物安全指引

 

近年本港食肆有涉及蛋或蛋類製品的食物中毒個案發生。蛋或蛋類製品若處理不當,例如蛋未經徹底煮熟及烹煮後貯存溫度不當,可引致食源性疾病。為此食安中心編製了食物安全指引,協助食物業處所在配製食物的過程中採取適當的食物安全措施。

(2)   食安中心公布夏季食物監測結果

 

中心近期公布二○二三年夏季食物監測結果,在1,850個完成檢測的食物樣本中,除較早前已公布的一個樣本外,其餘樣本全部通過檢測。

(3)   減少廚餘同時確保食物安全

 

廚餘若被棄置於堆填區,不但佔用了我們寶貴的土地資源,而且還會在分解過程中向大氣釋出稱為甲烷的強力溫室氣體,導致全球暖化和氣候變化。近年來國際間一致認為,為了實現減少碳排放等氣候目標,從而促進邁向碳中和,可持續的糧食系統是不可或缺的。其實我們都可以參與減少廚餘和實現碳中和,同時確保食物安全。

(4)   即食食物 - 給食物業界的一般衞生建議

 

即食食品是指無需進一步烹煮即可食用的食物,例如三文治、沙律蔬菜和預先烹煮的肉類(如燒味和滷味),以及提前烹製的凍食食物等。這些都屬於高風險食物,這些即食食品還可能助長「超級細菌」傳播。食安中心編製了食物安全指引為食物業處所在處理即食食品提供了一般衞生建議。

(1)    Eggs and Egg Products - Food Safety Guidelines for Food Businesses

 

In recent years, there have been local food poisoning cases involving eggs or egg products. Mishandling of eggs and egg products, such as inadequate cooking and improper holding temperature of eggs after cooking, may lead to foodborne illness. A food safety guideline was published by the CFS to assist food businesses in implementing appropriate food safety measures when handling food.

(2)   CFS announces test results of Summer Food Surveillance Programme

 

The CFS recently released the findings of its Summer Food Surveillance Programme 2023. The results of about 1,850 food samples tested were satisfactory except for one sample that had been announced earlier.

(3)   Cut Down Food Waste While Maintaining Food Safety

 

Food waste disposed of at landfills not only depletes our valuable land resources, but also releases a potent greenhouse gas called methane to the atmosphere as it decomposes. Methane contributes to global warming and climate change. In recent years, there is an international consensus that a sustainable food system is indispensable to achieve climate objectives like reducing carbon emission, thereby facilitating the progress towards carbon neutrality. All of us can therefore participate to help cut down food wastage and achieve carbon neutrality at no cost of food safety.

(4)   Ready-to-eat Food - General Hygiene Advice for Food Businesses

 

Ready-to-eat foods are foods that have been prepared so that they can be eaten without further cooking such as sandwiches, salad greens and pre-cooked meat (such as siu mei and lo mei) as well as food cooked ahead of time to serve cold. These kind of foods were found as high-risk foods which may help to spread “superbugs” apart from posing the risk of foodborne pathogens. The CFS has published a guide to provide general hygiene advice for food businesses when handling ready-to-eat foods.

(1)   學校午膳飯盒的食物安全

為提升供應學校午膳飯盒的持牌食物製造廠的食物安全和衞生意識,以及預備新學年開課,食物環境衞生署(食環署)食物安全中心(食安中心)及環境衞生部展開行動,巡查全港各區相關持牌食物製造廠,以保障食物安全。

飯盒供應商在準備食物時須保持良好的衞生習慣,並根據「食物安全重點控制」系統制定食物安全計劃,降低食物受污染的風險。而學校應選用已獲食環署簽發可供應午膳飯盒的持牌食物製造廠作為供應商,在訂購/簽約前,應到食物製造廠實地視察,以確定食物處理人員遵守食物安全和衞生守則。

(4)   慎防生蠔存有的風險

供生吃的蠔在進食前沒有經過加熱處理殺死病原體,因此是高風險食物。除了活蠔以外,市面可供市民購買的生蠔往往是預先去殼的冷藏或冰鮮生蠔,處理不當可導致細菌污染及蠔隻變壞。

孕婦、嬰幼兒、長者和免疫力弱人士應避免進食生或未煮熟的蠔。

(5)   食物安全巡迴展覽

2023年8月的巡迴展覽內容包括食物安全5要點、有機食物、孕婦食物安全建議、控制食物温度、天然毒素、營養標籤、預防食物交叉污染、殘餘獸藥、反式脂肪及基因改造食物。展覽將設於聯和墟街市、慈雲山中心、曉暉花園、工業貿易大樓、土瓜灣街市及駱克道街市。

(1) Food Safety of School Lunch Boxes

To enhance the awareness of food safety and hygiene of licensed food factories supplying school lunch boxes and to prepare for the new school year, the Centre for Food Safety (CFS) and the Environmental Hygiene Branch of the Food and Environmental Hygiene Department (FEHD) have launched a series of operations to inspect licensed food factories supplying school lunch boxes in various districts of Hong Kong with a view to ensuring food safety.

Lunch box suppliers should adhere to good hygiene practices when preparing food and establish a food safety plan based on the "Hazard Analysis and Critical Control Points" (HACCP) system to lower the risks of food contamination. At the same time, schools are also reminded to order lunch boxes from suppliers with a valid Food Factory Licence issued by the FEHD, and that suppliers are endorsed to provide lunch boxes. Before signing contracts with suppliers, schools should visit the premises to ensure that food handlers observe food safety and hygiene practices.

(4) Beware of the Inherent Risks of Raw Oysters

Oysters for raw consumption are a high-risk food as there is no heat treatment to kill pathogens before eating. Besides those sold alive, raw oysters available in the local market are often pre-shucked in either frozen or chilled forms. If not handled properly, it can lead to bacterial contamination and deterioration of the shellfish.

Pregnant women, infants and young children, the elderly and people with weakened immunity should avoid consuming raw or undercooked oysters.

The roving exhibitions will be held in August 2023 at Luen Wo Hui Market, Tsz Wan Shan Shopping Centre, Scenic View, Trade and Industry Tower, To Kwa Wan Market and Lockhart Road Market.

Panels cover topics on 5 Keys for Food Safety, Organic Food, Food Safety Advice for Pregnant Women, Control of Food Temperature, Natural Toxins, Nutrition Labelling; Prevention of Cross-contamination, Veterinary Drug Residues; Trans Fats and Genetically Modified Food.
