(1) 採取防疫措施以預防2019冠狀病毒病

因應近日2019冠狀病毒情況,食肆經營者應採用減少社交接觸措施,並要注重個人、食物及環境衞生,以減低疾病傳播的風險。這些措施包括遵從《預防及控制疾病(規定及指示)(業務及處所)規例》(第599F章)的指示;如患有或懷疑受到傳染病感染或出現病徵,應停止處理食物;如出現呼吸道感染病徵,應戴上外科口罩及盡早求醫;保持良好的個人衞生習慣;洗手時應以梘液和清水清潔雙手,搓手最少20秒;盛載食物的餐盤每次在客人使用後均須徹底清潔和消毒。如使用餐盤墊紙,亦應在每次使用後更換。

(2) 盆菜食物安全

盆菜內有眾多不同種類的食物,所需的準備和烹調程序往往比較繁複。市民購買盆菜時,應向信譽良好的持牌食物供應商訂購;若要自製盆菜,應注意個人及食物衞生,防止交叉污染。

因此,市民在準備或品嚐美食時,應注意食物安全及參考以下安全貼士:

(3) 新春安全及健康飲食貼士

按照習俗,中國人會在春節期間在居室或工作間張貼揮春,擺放桃花或牡丹等花卉。此外,又會購買和準備各樣寓意吉祥的賀年食品及佳餚如年糕、油角、湯圓、鮑魚和臘味款客自用,冀望大家在新一年有一個好的開始。

市民除要注意食物安全外,亦應保持飲食均衡,恆常運動,每天要進食最少兩份水果及三份蔬菜,及避免過量進食高糖分、高脂肪及高膽固醇的賀年食品。

(5) 賀年時令食品調查(第二期)結果

中心於一月二十一日公布,最近完成一項有關賀年食品的時令食品調查(第二期),約九十四個樣本中,除較早前公布的一個預先包裝蜜棗樣本違反食物標籤規例及一個糖冬瓜樣本防腐劑含量超出法例標準外,其餘樣本全部通過檢測。

(1) Adopting anti-epidemic precautionary measures on the Prevention of COVID-19

In response to the recent situation of Coronavirus Disease (COVID-19), food premises operators should adopt measures to observe social distancing and pay attention on personal, food and environmental hygiene, so as to reduce the risk of spreading diseases. These measures include complying with the directions under the Prevention and Control of Disease (Requirements and Directions) (Business and Premises) Regulation (Cap. 599F); suspending from engaging in any food handling work when suffering or suspected to be suffering from an infectious disease or symptoms of illness; wearing a surgical mask when having respiratory symptoms and seeking medical advice promptly; maintaining good personal hygiene; washing hands with liquid soap and water, and rubbing for at least 20 seconds; cleaning and disinfecting trays every time after used by customers. If tray lining is used, it shall also be replaced every time after use.

(2) Poon Choi and Food Safety

"Poon Choi", which comprises a great variety of food, involves a number of processing steps, which demands meticulous attention during preparation. People should order their "Poon Choi" from reputable and licensed food suppliers. If they want to make their own, they should maintain good personal and food hygiene to prevent cross contamination.

To enjoy a delicious and healthy meal, people should pay particular attention to food safety. Here are some safety tips for enjoying "Poon Choi":

(3) Chinese New Year Safe and Healthy Eating Tips

During the New Year days, Chinese will follow the custom of putting up well wishing slogans and flowers such as peach blossom or peony at homes or in work places. In addition, they will buy or prepare new year snacks and delicacies with good omens such as new year cake, deep-fried dumplings, glutinous rice dumplings, abalone and preserved pork for serving guests and families, so that everybody will be blessed with a good start in the new year.

Besides paying attention to food safety, we should also maintain a balanced diet. Exercise regularly, and take at least 2 servings of fruits and 3 servings of vegetables every day. Avoid eating too much New Year food with high sugar, high fat and high cholesterol content.

(5) CFS announces test results on Lunar New Year food (second phase)

CFS announced the test results of a recently completed seasonal food surveillance project on Lunar New Year (LNY) food (second phase). Among the 94 samples collected for testing, except for a sample of prepackaged dates in breach of food labelling regulations and a sample of sweetened winter-melon detected with a preservative exceeding the legal limit, both of which were announced earlier, the test results were satisfactory.

(1) 咖啡與丙烯酰胺

 

咖啡在烘焙咖啡的過程中,可產生污染物丙烯酰胺,國際癌症研究機構將之歸類為可能令人類患癌。不過,中心的數據顯示本港成年人從咖啡攝入丙烯酰胺的分量佔總膳食攝入量的百分比屬輕微。

(2) 魚類與甲基汞

 

汞(俗稱水銀)是一種天然存在的重金屬,隨工業廢物進入環境中,以不同的形態存在。水中的微生物把汞轉化為毒性較強的甲基汞,為水中的生物所吸收,積聚在食物鏈內。因此,捕獵性魚類的甲基汞含量通常較高。

 

魚類含有多種人體必要的營養素,例如奧米加-3脂肪酸及優質蛋白質。為了飲食均衡,宜適量進食各種魚類並保持均衡並多元化的飲食,以免因偏吃而攝入過量金屬污染物。

(3) 蔬菜中的除害劑殘餘

 

除害劑是用來防治、殺滅、驅趕或減少有害生物的單種或混合物質。使用除害劑為農業上常見的做法, 農民如遵照標籤指示及優良務農規範適當地使用除害劑,在收割時殘留在農作物的除害劑分量一般不會超過當地的最高殘餘限量,對健康的影響微乎其微。由於最高殘餘限量遠低於對健康構成影響的分量,即使除害劑殘餘高於限量,並不表示公眾健康會有即時危險,而是反映業界沒有嚴格遵守優良務農規範。

(5)賀年時令食品調查(第一期)結果滿意

 

中心於今日一月四日公布,最近完成一項有關賀年食品的時令食品調查(第一期),約五百二十個樣本中,除較早前公布的一個預先包裝乾冬菇樣本違反食物標籤規例及一個蘿蔔糕樣本含不准添加的防腐劑外,其餘樣本全部通過檢測。

(1) Coffee and acrylamide

 

Coffee roasting can cause the formation of acrylamide, a process contaminant that is probably carcinogenic to humans as classified by the IARC.  However, CFS data indicate that the contribution of coffee to acrylamide intake to the diet of local adults is insignificant.

(2) Fish and Methylmercury

 

Mercury is a heavy metal that occurs naturally and being introduced into the environment from industrial waste.  Mercury exists in different forms.  Microorganisms in the water convert mercury into the more toxic methylmercury which is readily taken up by living organisms in the water and accumulates up the food chain.  Thus, predatory fish usually contain higher levels of methylmercury.

 

Fish contain many essential nutrients, such as omega-3 fatty acids and high quality proteins. Moderate consumption of a variety of fish is recommended for a balanced diet. Maintain a balanced and varied diet can avoid excessive exposure to metallic contaminants from a limited range of food items

(3)    Pesticide Residues in Vegetables

 

Pesticides are substances or mixtures of substances intended for preventing, destroying, repelling or mitigating pests. They are commonly used in agriculture. When farmers use a pesticide according to label instructions and Good Agricutlural Practice (GAP), the residues in crop at harvest do not normally exceed the maximum residue limits (MRLs) established in the place of use and are very unlikely to pose a health risk. Since MRLs are set at levels well below the amount that could pose a health concern, a residue level above the limit may indicate non-compliance of GAP but does not necessarily imply immediate risk to consumers' health.

(5)CFS announces test results on Lunar New Year food (first phase)

 

CFS announced the test results of a recently completed seasonal food surveillance project on Lunar New Year (LNY) food (first phase). The test results of around 520 samples collected were satisfactory, except for a prepackaged dried mushroom sample in breach of the food labelling regulation and a turnip pudding sample detected with a non-permitted preservative, which were announced earlier.

(1) 減低幼兒被食物哽喉引致窒息的風險

由於幼兒的呼吸道及食道較細,而咬碎或咀嚼食物的技巧亦未成熟,因此容易被食物哽喉;特別是進食難以咬碎或咀嚼的食物時,食物或會卡在咽喉,引致窒息。當中較易哽喉的食物,包括:蒟蒻果凍、生紅蘿蔔、葡萄、桃駁梨、熱狗、花生醬及新鮮菠蘿等。

就以上較易哽喉的食物中(例如:蒟蒻果凍),它本身是安全的食物,但蒟蒻果凍體積通常比較細小,食用時多採用吸啜的方法。而且,果凍質地亦較為結實,在口腔內難於溶化,故進食時不小心容易引致氣管阻塞,釀成意外。

為減低幼兒被食物哽喉的風險,家長或照顧者應採取以下的安全措施:

  • 時刻留意幼兒的狀況,尤其進食時要特別小心;
  • 採用不同的方法改變高風險食物的質地,例如烹煮、切碎、搗碎、削掉外皮或除去纖維含量高的部分;
  • 避免讓幼兒進食難以改變質地的食物(例如細小的堅硬食物);及
  • 以蒟蒻果凍為例,照顧者應避免幼兒用吸啜的方法進食,並應將蒟蒻果凍切成小塊才進食。


食物安全中心(中心)呼籲家長或照顧者教導孩童或幼兒,切勿直接吸食較易哽喉的食物,以免釀成意外。此外,中心亦不斷提醒食物業界(包括:食品製造商)改良食物產品設計,特別是食物的體積,及在食物包裝上加上適當的警告標籤,讓家長或照顧者提高警覺。

(2) 同心抗疫預防2019冠狀病毒

為減低2019冠狀病毒病在食肆傳播的風險,食肆經營者應保持高水平的清潔及衞生標準。食物安全中心提醒食肆員工應保持良好的個人衞生習慣(例如在處理食物前後、進行清潔之後、 處理廚餘或垃圾後以� ��上廁所後要洗手)。

為配合政府進一步收緊社交距離措施以應對本港的2019冠狀病毒病疫情,食物安全中心位於食環署南昌辦事處的傳達資源小组辦事處將由二零二二年一月七日(星期五)起暫停開放,並取消在有關場地舉行的公眾活動,直至另行通告。

(1) Minimising Food-related Choking in Young Children

Young children have small air and food passages, and their food-biting or chewing skills are still under development, they can choke on food easily especially when the foods are difficult to bite or chew and may then get stuck in their throats. Foods more likely to cause choking include konjac jellies, raw carrot, grapes, nectarines, hot dogs, peanut butter and raw pineapple etc.

For the foods likely to cause choking above (for example, konjac jellies), they are safe for consumption. However, konjac jellies are so small that people tend to suck them out directly into the mouth. They are harder than ordinary jellies and do not dissolve easily in the mouth. Sucking also causes the jelly to block the windpipe easily.

To minimise the risks of food-related choking in young children, the caregivers should take the following preca utionary measures:

  • Always pay attention to the young children especially take great care during consumption;
  • Modify the texture of high risk foods by various techniques, e.g. cooking, fine-chopping, mashing, peeling off the skin, or removing the strong fibres;
  • Avoid giving foods that the texture is difficult to be modified (e.g. small hard foods) to young children; and
  • As an example, the caregivers should avoid young children sucking the konjac jellies and should cut them into small pieces before consumption.


To avoid any accidents, the Centre for Food Safety (CFS) calls on parents or caregivers to teach their children or young children the correct way, instead of sucking, to eat the foods likely to cause choking. The CFS also intermittently reminds the food trade (including food manufacturers) to improve the design of the food products, especially their size. A warning should be added on the food package to remind parents or caregivers to take care when eating the above foods.

(2) Let's Beat COVID-19 Together

To minimise the risk of transmission of COVID-19 in food premises, operators of food premises are advised to maintain high standards of hy giene and cleanliness. The CFS reminds the staff of food premises to practise good personal hygiene (e.g. washing hands before or after handling food, after clean-up is carried out, after handling refuse or other dirty items, and after visiting the toilet).

(3) Temporary closure of Communication Resource Unit

To tie in with social distancing measures tightened by the Government in response to the epidemic situation of COVID-19 in Hong Kong, the CFS' Communication Resource Unit located at FEHD Nam Cheong Offices will be temporarily closed from 7 January 2022 (Friday) with all programmes held at the Unit cancelled until further notice.
