食安中心(中心)公布檢測巴西進口雞肉樣本結果
Centre for Food Safety (CFS) announces test results of poultry meat samples from Brazil

因應深圳市疫情防控指揮部辦公室的信息指深圳發現一份從巴西進口的雞翼表面樣本對2019冠狀病毒病檢測結果呈陽性,作為預防性措施,中心已從進口及批發層面抽取共40個來自巴西的冷藏雞肉樣本作2019冠狀病毒病檢測。檢測結果顯示,所有樣本對2019冠狀病毒病呈陰性反應。

中心八月十三日得悉有關事件後,已即時向深圳及巴西有關當局了解事件,並與本地主要進口商及零售商跟進。調查發現,涉事批次雞翼迄今沒有在港發售。為審慎起見,中心亦暫時停止辦理相關廠房(註冊號:SIF601)的禽肉進口許可證申請,並等待有關當局提供進一步相關個案的調查和化驗資料。

根據世界衞生組織和各地的食物安全機構資料,目前沒有證據顯示人類會透過食物感染2019冠狀病毒病。中心提醒市民應徹底煮熟食物,避免食用生或未煮熟的� �物產品,以及分開處理生熟食物,特別是處理生肉及內臟,以免食物交叉污染;並時刻保持個人、食物及環境衞生。特別是市民應注意手部衞生,若接觸環境表面或未煮熟食物後,不應觸摸眼、耳、口或鼻。

食物業員工應時刻保持雙手清潔,並經常清潔和消毒物件表面,特別是食物業店內的食物接觸面(如餐廚具、外賣保溫袋、收銀台輸送帶等)和頻密接觸點(如門柄、購物車把手、水龍頭等),確保環境衞生,同時採取保持社交距離的措施。員工如患有或懷疑受到傳染病感染或出現病徵,應停止處理食物及盡早求醫。

中心會繼續跟進事件和因應最新情況採取適當行動。

In view of a notice issued by the Shenzhen Headquarters for Prevention and Control of Pneumonia Epidemic Caused by Novel Coronavirus that a surface sample of chicken wings imported from Brazil teste d positive for COVID-19 in Shenzhen, the CFS had taken a total of 40 samples of frozen chicken meat from Brazil at import and
wholesale levels for testing of the COVID-19 as a precautionary measure. All samples tested negative for the COVID-19.

Upon learning of the incident on August 13, the CFS had immediately contacted the relevant authorities in Shenzhen and Brazil to understand the incident, and followed up with major local importers and retailers. An investigation revealed that the batch of
chicken wings concerned has not been on sale in Hong Kong so far. For the sake of prudence, the Centre has also temporarily suspended the import licence application for import of poultry meat into Hong Kong from the plant concerned (registration number: SIF601), while waiting for further case investigation and testing details from the relevant authorities.

According to the World Health Organization and global food safety authorities, there is no evidence indic ating that humans can be infected by the COVID-19 via food. The CFS reminded the public to cook food thoroughly and avoid consuming raw or undercooked animal products, as well as to handle raw and cooked food separately, especially when handling raw meat and offal, so as to avoid cross-contamination of food. Members of the public should also maintain personal, food and environmental hygiene at all times. In particular, the public should observe hand hygiene and avoid touching the eyes, ears, mouth or nose after contacting the surfaces of environment and uncooked food.

Food handlers that they should always keep their hands clean and frequently clean and disinfect surfaces, especially food contact surfaces in food premises (such as tableware, kitchenware, insulated bags for takeaways, conveyor belts at cashier desks) and frequent-touch points (such as door handles, handles of shopping trolleys and water taps) to ensure environmental hygiene, while social distancing measures should also be adopted. Food handlers should cease engaging in any food handling work and seek medical advice promptly when suffering or suspected to be suffering from an infectious disease or symptoms of illness.

The CFS will continue to follow up on the incident and take appropriate action in light of the latest development.

食物環境衞生署(食環署)食物安全中心(食安中心)服務最新安排
Latest Service Arrangements of the Centre for Food Safety (CFS) of the Food and Environmental Hygiene Department (FEHD)

因應2019冠狀病毒病疫情,食安中心於2020年7月20日起調整以下服務,直至另行通知,詳情如下:
1.    位於九龍欽州街西87號食環署南昌辦事處4 樓的傳達資源小組辦事處暫停開放,而在有關場地舉行的公眾活動已取消。該辦事處的電話查詢服務則維持正常:

星期一至五: 

上午8時45分至下午1時;

下午2時至下午5時30分

星期六、日及公眾假期休息。



2.    有關安排檢查食物製作工序以處理動物製食品衞生證明書申請的時間將由現時約14個工作天延長至約21個工作天。而相關衞生證明書會在完成審批過程及達簽證要求後3個工作天內簽發。

3.    原定於2020年8月舉行的二零二零年度食物業界講座及「食物安全重點控制」工作坊已取消。

In view of the epidemic situation of COVID-19, the CFS has adjusted its services as follows from 20 July 2020 until further notice:
1.    The Communication Resource Unit located at 4/F, FEHD Nam Cheong Offices, 87 Yen Chow Street West, Kowloon is temporarily closed with all programmes held at the Unit being cancelled, while its telephone enquiry service operates as normal:

Mondays to Fridays:

8:45 am to 1:00 pm;

2:00 pm to 5:30 pm

Saturdays, Sundays and Public Holidays: Closed


2.    With respect to the application for a Health Certificate for Foods of Animal Origin, the time required for arranging a field inspection of the food manufacturing process will be extended from currently about 14 working days to about 21 working days.  Subject to meeting all the specified requirements, the Health Certificate will be issued within 3 working days after the inspection.

3.    The 2020 Trade Talks and workshops on Hazard Analysis and Critical Control Point scheduled for August 2020 are cancelled.

已獲小量豁免產品名單
List of Small Volume Exemption Products

根據小量豁免制度,在香港每年銷售量不超過30,000件的相同版本預先包裝食物,可獲授予營養標籤豁免。有關豁免產品名單已上載中心網頁。
Under the Small Volume Exemption (SVE) Scheme, prepackaged foods of the same version with annual sales volume in Hong Kong not exceeding 30,000 units may be granted with exemption from providing nutrition labelling. List of SVE products has been uploaded onto the CFS website.

正確使用手套處理食物

Appropriate Use of Gloves to Handle Food

配戴手套可避免雙手直接接觸即食食物,不過若使用不當,手套可增加交叉污染的機會。只有食物從業員在進行不同的工作時使用新的手套,並在更換手套時注意衞生,手套才能發揮其功效。

Wearing gloves is an acceptable way to minimise manual contact with ready-to-eat food. However, if gloves are used improperly, it may increase the risk of cross-contamination as gloves can become contaminated with bacteria in the same way as hands. Gloves are only beneficial when a new glove is used for each activity and food handlers take care when changing gloves.

使用用後即棄手套時,要留意以下幾項要點:

When using disposable gloves, pay attention to the following points:

  • 配戴尺碼合適的手套;
  • Wear gloves of the right size;
  • 配戴前、脫去後及更換手套時應徹底清潔雙手20秒;
  • Clean hands thoroughly for 20 seconds before wearing, after taking off and when changing gloves;
  • 手套如沾污或有破損,或員工要轉換或離開工作崗位,就需要更換手套;
  • Change the gloves if they are soiled or damaged, or the employee wants to change or leave the job position; and
  • 將用過的手套立刻棄掉,不應重用。
  • Discard the used gloves immediately and do not reuse them.

 請謹記,配戴手套不可以代替洗手及良好的個人衞生;不正確使用手套等同於沒有徹底清潔雙手。徹底清潔雙手是防止雙手污染食物的最有效方法。

Please be reminded that wearing gloves cannot substitute hand washing and good personal hygiene; improper use of gloves is as unhygienic as inadequate hand washing. Washing hands thoroughly is the best way to prevent contamination of food by hands.

即食食品含蠟樣芽孢桿菌和產氣莢膜梭狀芽孢桿菌專項調查結果

CFS announces results of targeted surveillance on Bacillus cereus and Clostridium perfringens in ready-to-eat food

 中心公布最近完成一項有關即食食品含蠟樣芽孢桿菌和產氣莢膜梭狀芽孢桿菌情況的專項食品調查。根據《食品微生物含量指引》,沒有任何樣本被界定為不滿意。

The CFS announced that the results of a recently completed targeted food surveillance project on Bacillus cereus and Clostridium perfringens in ready-to-eat food. None of the samples taken were found to be unsatisfactory, according to the Microbiological Guidelines for Food.
