處理食物要衞生 預防疾病要留神 Practise Food Hygiene to Prevent Food-borne Diseases 食源性疾病包括甲型肝炎、霍亂、痢疾、腸熱及食物中毒等,都是由於進食或飲用受細菌、過濾性病毒、原蟲或化學品物質沾污的食物或食水,或進食本身含有毒素的食物而引致。其實,只要我們在處理食物的各階段都遵守衞生守則,便可以有效地預防各樣食源性疾病。具體的做法可從個人衞生、環境及用具衞生及食物衞生着手。 Food-borne diseases such as hepatitis A, cholera, dysentery, typhoid and food poisoning are transmitted through ingestion of food and water contaminated by bacteria, viruses, protozoa, chemicals, or consumption of food that contains toxins. The best way to prevent these diseases is to observe good hygiene practices at all stages of food preparation. People affected may show symptoms of mouth and limbs numbness, vomiting, diarrhoea, nausea, abdominal pain and pain of the joints and muscles.
