盆菜微生物含量調查結果

Test results on microbiological quality of poon choi

中心公布最近完成一項有關盆菜微生物含量的時令食品調查結果。三十個樣本全部通過檢測。

 The CFS announced that the test results of a recently completed seasonal food surveillance project on the microbiological quality of poon choi. Thirty samples were collected and all passed the tests.

採取防疫措施以預防2019冠狀病毒病

Adopting anti-epidemic precautionary measures on the Prevention of COVID-19

 

鑑於近日有食物業從業員確診2019冠狀病毒病,食肆經營者應採用減少社交接觸措施,並要注重個人、食物及環境衞生,以減低疾病傳播的風險。這些措施包括遵從《預防及控制疾病(規定及指示)(業務及處所)規例》(第599F章)的指示;如患有或懷疑受到傳染病感染或出現病徵,應停止處理食物;如出現呼吸道感染病徵,應戴上外科口罩及盡早求醫;保持良好的個人衞生習慣;洗手時應以梘液和清水清潔雙手,搓手最少20秒;盛載食物的餐盤每次在客人使用後均須徹底清潔和消毒。如使用餐盤墊紙,亦應在每次使用後更換。

In the light of the recent food handlers related Coronavirus Disease (COVID-19) cases, food premises operators should adopt measures to observe social distancing and pay attention on personal, food and environmental hygiene, so as to reduce the risk of spreading diseases. These measures include complying with the directions under the Prevention and Control of Disease (Requirements and Directions) (Business and Premises) Regulation (Cap. 599F); suspending from engaging in any food handling work when suffering or suspected to be suffering from an infectious disease or symptoms of illness; wearing a surgical mask when having respiratory symptoms and seeking medical advice promptly; maintaining good personal hygiene; washing hands with liquid soap and water, and rubbing for at least 20 seconds; cleaning and disinfecting trays every time after used by customers. If tray lining is used, it shall also be replaced every time after use.

傳達資源小组辦事處暫停開放

Temporary closure of Communication Resource Unit

為配合政府進一步收緊社交距離措施以應對本港的2019冠狀病毒病疫情,食物安全中心位於食環署南昌辦事處的傳達資源小组辦事處已由十二月二日(星期三)起暫停開放,並取消在有關場地舉行的公眾活動,直至另行通告。

To tie in with social distancing measures tightened by the Government in response to the epidemic situation of COVID-19 in Hong Kong, the CFS' Communication Resource Unit located at FEHD Nam Cheong Offices is temporarily closed from 2 December (Wednesday) with all programmes held at the Unit cancelled until further notice.

臘味時令食品調查結果

CFS announces results of seasonal food surveillance project on lap-mei

 

中心公布最近完成一項有關臘味的時令食品調查結果。約一百四十個臘味樣本中,除較早前已公布的一個鴨腎樣本被驗出鈉含量與營養標籤上的標示值不符外,其餘樣本全部通過檢測。

The CFS announced that the results of a recently completed seasonal food surveillance project on lap-mei. The test results of around 140 samples collected were satisfactory, except for a duck gizzard sample found with sodium content inconsistent with the declared content on its nutrition label, which was announced earlier.

Results of Compliance Test for Nutrition Labelling and Declaration of Allergens for October 2020

 

為確保預先包裝食品符合《食物及藥物(成分組合及標籤)規例》,中心自2012年 起,一直有抽取預先包裝食物的樣本作檢測,其中包括檢測營養素含量及致敏物。 2020年10月份有關營養素含量及致敏物檢測結果的報告,已上載到中心網頁。

The CFS has been testing, among other things, nutrients and allergens in prepackaged food samples for compliance under the Food and Drugs (Composition and Labelling) Regulations since 2012. The report on Results of Compliance Test for Nutrition Labelling and Declaration of Allergens under the Regulations for October 2020 has been uploaded onto the CFS website.

Health Advice for Frozen Food Handlers on the Prevention of COVID-19

因應中國內地從進口冷凍食品的包裝檢測並分離出存活的 2019 冠狀病毒,經常處理冷凍食品的人員須注意相關的感染風險。食物安全中心建議冷凍食品處理人員從個人衞生、個人防護裝備、環境衞生及保持社交距離等多方面著手採取措施,以減低處理冷凍食品時感染 2019 冠狀病毒病(COVID-19)的風險。
In view of the detection and isolation of live SARS-CoV-2 coronavirus from the outer packaging of imported frozen food in mainland China, people frequently handling frozen food should be alert of the relevant risk of infection. The Centre for Food Safety recommends frozen food handlers to adopt the measures on personal hygiene, personal protection equipment, environmental hygiene and physical distancing to minimise the risk of infecting COVID-19 when handling frozen food.

Not Easy to Keep Insect Fragments Away

食物在生產過程中有可能受到外來物質的污染,部分外來物(例如金屬、塑膠或玻璃碎片)會為消費者帶來嚴重的健康風險,可能令市民進食時受傷。另一方面,� ��些外來物屬食物品質問題,影響消費者的觀感,但不會對消費構成健康風險,可被視為「食品缺憾」。其中一種可能出現的「食品缺憾」是穀類製品中而肉眼看不見的輕質異物,當中以微細的昆蟲碎片較為常見。這些昆蟲碎片一般來自收割穀物時一併被收集的微細昆蟲,即使生產商已採取措施清除,但仍可能有「漏網之蟲」。這些微細昆蟲在其後的加工過程中被磨成極細的碎片,成為穀類產品輕質異物。
Food may be contaminated with foreign substances during manufacturing processes.  Some of them would pose severe health risk and some would not. Foreign substances such as metal pieces, plastic substance or glass fragments may pose severe health hazards to consumers upon consumption.  Some other foreign substances are of a ‘food defect’, but may result in consumers’ negative perception on the food products. This concerns the quality of the food rather than food safety.  An example of the ‘food defects’ is the presence of light filths, such as tiny insect fragments, which are invisible to the naked eyes in cereal products. These fragments usually come from the tiny insects which are mixed into the produce during harvesting. Although the manufacturers have adopted prevention measures, it is still not practical to keep all tiny insects away. The insects will be ground into much smaller pieces on further processing and in turn become light filths in the final products.

Although these light filths generally will not be harmful to people, this may affect consumers’ perception on the food products. The CFS advises the trade to review and further improve their food manufacturing process in order to minimise the quantity of light filths therein.  Consumers should purchase food products from the reliable retail outlets with sound reputation. The food products should be properly stored according to the storage advice on the food label.  Consumers should also pay attention to the conditions of food, and should not buy exposed food and food which appears and smells abnormal.  If the food is suspected to have foreign substances or quality problem, consumers may approach the retailers or call at 1823 in case of complaints.

中心公布最近完成一項有關大閘蟹的時令食品調查結果,八十二個樣本全部通過檢測。
The CFS announced that the results of a recently completed seasonal food surveillance project hairy crabs. The results of 82 samples tested were all satisfactory.

同心抗疫不要鬆懈

No Let-up in the Fight against Virus Together

於2020年10月30日食肆每桌人數上限增至六人,大家可能會多選擇外出用膳。根據現有科學資料及世衞意見,人類不大可能從食物感染2019冠狀病毒病。不過,大家亦不能夠鬆懈,為了減低2019冠狀病毒病傳播的風險,無論市民還是食物業界員工,除了需保持社交距離,亦要加強個人、環境及食物衞生。此外,食物(包括生肉)在進食前必須徹底煮熟。如患有或懷疑受到傳染病感染或出現病徵,應停止處理食物,並及早求醫。

最後,大家外出用膳時謹記防疫三寶:戴口罩、量體溫及經常用消毒搓手液,便會更安心。

With the relaxing of maximum number of people allowed to be seated together at one table to six people at one table in restaurants on 30 October 2020, we may be more preferable to dine-in. According to the scientific information and the advice of the World Health Organization, the risk of acquiring the virus through food appears to be very low in real-life situations.  However, in order to minimise the risk of COVID-19 spreading in the community, we all, including the public and the staff of food business, should not let up and need to work together on social distancing and enhance personal, environmental and food hygiene.  Moreover, food, including raw food, should be thoroughly cooked before consumption.  If the food handlers are suffering or suspected to be suffering from an infectious disease or symptoms of illness, they should suspend from engaging in any food handling work and seek medical advice promptly.

Finally, when dining-in, we should always observe the three health tips for fighting the Virus by wearing surgical masks, checking temperature and frequently performing hand hygiene by the use of Alcohol-based handrub.

For continuous upkeep of environmental hygiene, food business operators and food handlers must make concerted and persistent efforts to ensure cleanliness and hygiene of the premises and food safety. 《2018年食物攙雜(金屬雜質含量)(修訂)規例》全面生效

Food Adulteration (Metallic Contamination) (Amendment) Regulation 2018 takes full effect

《2018年食物攙雜(金屬雜質含量)(修訂)規例》(《修訂規例》)有關更新食物中金屬雜質含量相關標準的條文已於十一月一日全面生效,所有類別的食物必須符合《修訂規例》的規定。

The Food Adulteration (Metallic Contamination) (Amendment) Regulation 2018 (the Amendment Regulation), which stipulates the updated standards for metallic contamination in food, has been taken full effect since November 1. All kinds of foods must comply with the Amendment Regulation.

香料的貯存建議

Storage Advice for Spices

香料大多源於熱帶地區,當地炎熱又潮濕的天氣尤其有利霉菌滋生,萬一香料粉貯存得不妥當,霉菌更加有機可乘。部份霉菌更可能會產生毒素!其中一種可能在受污染的香料、咖啡豆及穀物出現的霉菌名為赭曲霉毒素A(Ochratoxin A),長期攝入會損害腎臟。至於大家可能聽過的黃曲霉毒素(Aflatoxins)就較多出現在受污染的穀物、花生、杏仁等,長期攝入可能引致肝臟受損、肝硬化,甚至肝癌。

  • 如不想香料發霉而浪費食物,同時想減低攝入霉菌毒素的風險,大家應該:
  • 避免將香料粉放入雪櫃以免因貯存及使用時的温差造成水凝結
  • 向可靠商戶選購香料,避免每次購買太多
  • 妥善跟隨生產商指示貯存香料,例如貯存在陰涼、乾爽、通風良好的地方
  • 存放香料粉的位置要遠離爐具等熱源及潮濕的地方
  • 提取香料粉的器具要清潔乾爽,不要用濕或木製的器具
  • 用完香料粉後緊記蓋緊容器,阻隔空氣中的水分

至於業界便應該遵守食品法典委員會的相關操作規範,向可靠供應商採購食材,並且將香料妥善貯存,減低香料受霉菌污染的機會。

Spices are mostly produced in tropical areas with high temperatures and humidity which favour mould growth. If the spices are not stored properly, the mould may grow easily and some of them may even contain mycotoxins. One of the common mycotoxins that may be found in contaminated spices, coffee beans and cereals is called Ochratoxin A, which may cause kidney damage after long-term intake. Another mycotoxin, commonly known as Alfatoxin, can usually be found in contaminated cereals, peanuts and almonds etc. and may cause liver damage, cirrhosis, or even liver cancer after long-term intake.

If you want to reduce the food waste because of mouldy spices and the risk of taking in mycotoxins, the public is advised to:

  • avoid storing spices in refrigerators to prevent condensation due to temperature difference between storage and usage
  • purchase spices from reliable sources and estimate the quantity to be used to avoid unnecessary stockpiling
  • follow the storage instructions provided by the manufacturer (e.g. stored in a cool, dry and well-ventilated area)
  • store spices away from heat sources (e.g. ovens) and areas with high humidity
  • choose dry and clean utensils to wet and wooden ones when contacting the spices
  • close the spice containers tightly immediately after use to keep spices free of moisture or humidity

The trade is advised to follow the related Code of Practice from CODEX, purchase raw materials from reliable suppliers and store the spices properly to prevent introduction and contamination of moulds.

二零二零年「食得安心:生冷食物要留神」食物安全講座系列

2020 Food Safety Talk Series on "Eat Safe! Know Your High-risk Foods"

中心將於十月至十二月期間舉辦一系列講座,提醒公眾及食物業界對「生冷食物要留神」,藉此跟市民,特別是高危人士,分享一下在日常生活中如何小心這些生冷食物。同時,亦提醒食物業界,可以為消費者就生冷食物作出知情選擇可以多下什麼功夫。此外 ,講座亦包括有「食物安全重點控制」系统、「抗菌素耐藥性問題」、「食物安全五要點」及「營養標籤」等內容,從而提高大家對食物安全及健康飲食的認識,務求食得健康又安心。

The CFS is going to hold a series of talks on related topics during the period from October to December 2020. The talks will remind the public and the food trade of “Eat Safe! Know Your High-risk Foods”, thereby sharing with the public, especially susceptible populations, on how to be vigilant about high-risk foods in their daily diet. At the same time, the food trade could be reminded to exert efforts to empower consumers to make informed choices about high-risk foods. The talks will also cover other topics such as "Introduction to Hazard Analysis and Critical Control Points (HACCP)", "the threats of antimicrobial resistance", "Five Keys to Food Safety" and "Nutrition Label" . The Centre for Food Safety would like to promote the health eating habit and raise awareness on the importance of food safety and healthy diet. As such, everyone can enjoy food in a safe and healthy way.
