傳達資源小組的主題展覽
Theme Exhibitions in Communication Resource Unit

中心轄下的傳達資源小組現正舉辦以「食物風險管理」及「食物中的除害劑及獸藥殘餘」為主題的展覽。展覽活動包括播放教育短片,設置展板讓市民增加對食物安全的認識,更備有各種食物安全宣傳單張供公眾取閱。小組位於九龍旺角花園街市政大廈8樓,歡迎到場觀賞。
The Communication Resource Unit (CRU) of the CFS is organising the exhibitions on the theme of "Food Safety Plan" and "Pesticide and Veterinary Drug Residues in Food". The exhibition includes short food safety and education videos and exhibition boards to enrich the public's knowledge on food safety. You are welcome to join us at the CRU at 8/F, Fa Yuen Street Municipal Services Building, Mongkok, Kowloon.

專項食品調查 - 即食食品含凝固酶陽性葡萄球菌
Targeted food surveillance on coagulase-positive staphylococci organisms in ready-to-eat food

金黃葡萄球菌是一種常見並可引起食物中毒的細菌。這種細菌廣泛存在於環境中,常見於身體健康的人的鼻腔、咽喉、頭髮及皮膚,並大量存在於傷口和受感染的部位,食物處理人員若不注重個人衞生,有可能把身上的金黃葡萄球菌傳播到食物。食物若在室溫下存放過久,會引致金黃葡萄球菌迅速繁殖並產生腸毒素,引起食物中毒。儘管大部分感染個案由金黃葡萄球菌引致,但其他凝固酶陽性葡萄球菌也可以產生引致食物中毒的腸毒素。由凝固酶陽性葡萄球菌引起的食物中毒,通常都與進食配製工序較多,食用前又無需再烹煮的食物有關。但由於烹煮的熱力不能消除凝固酶陽性葡萄球菌產生的腸毒素,即使經翻熱後才進食仍有風險。中心最近完成一項有關即食食品含凝固酶陽性葡萄球菌(包括金黃葡萄球菌)情況的專項食品調查,有關的檢測結果已上載於中心網頁。
Staphylococcus aureus is a common bacterium that can cause food poisoning. It exists widely in the environment and is commonly found in the nasal cavity, throat, hair and skin of healthy individuals. It is also present in large numbers in wounds and infected regions. If food handlers do not observe good personal hygiene, Staphylococcus aureus can pass to foods from them. Foods stored at ambient temperature for a prolonged period will allow the toxin-producing Staphylococcus aureus to multiply and elaborate enterotoxins which can cause food poisoning. Although most cases of infection are caused by Staphylococcus aureus, other coagulase-positive staphylococcus species can also produce enterotoxins which can lead to food poisoning. Food poisoning caused by coagulase-positive staphylococci organisms is usually associated with foods that require considerable handling during preparation and no subsequent cooking is required before consumption. Food risk cannot be eliminated by reheating as enterotoxins produced by coagulase-positive staphylococci organisms cannot be destroyed under normal cooking temperatures. The CFS has recently completed a targeted food surveillance project on coagulase-positive staphylococci organisms (including Staphylococcus aureus) in ready-to-eat food. The findings has been uploaded onto the CFS website.

2015年5月份預先包裝食物之營養素含量及致敏物檢測結果
Results of Compliance Test for Nutrition Labelling and Declaration of Allergens for May 2015

為確保預先包裝食品符合《食物及藥物(成分組合及標籤)規例》,中心一直有抽取預先包裝食物的樣本作檢測,其中包括檢測營養素含量及致敏物。而營養素含量及致敏物檢測結果的每月報告已上載到中心網頁。
The CFS has been testing, among other things, nutrients and allergens in prepackaged food samples for compliance under the Food and Drugs (Composition and Labelling) Regulations. Monthly Report on Results of Compliance Test for Nutrition Labelling and Declaration of Allergens under the Regulations has been uploaded onto the CFS website.

食物安全巡迴展覽
Roving Exhibition on Food Safety

7月的巡迴展覽內容包括食物安全五要點、雪卡毒素、基因改造食物、營養標籤、反式脂肪、預防食物交叉污染、控制食物溫度及食物安全條例。展覽將設於東涌富東邨富東廣場、筲箕灣耀東商場、元朗同益街市、旺角政府工業貿易署及黃大仙鳳德邨(公屋)。
The coming exhibitions will be held in July at Fu Tung Plaza in Lantau Island, Yiu Tung Shopping Centre in Shau Kei Wan, Tung Yick Market in Yuen Long, Trade and Industry Department Tower in Mongkok and Fung Tak Estate in Wong Tai Sin (Public Housing). Panels cover topics on 5 keys to food safety, ciguatoxins, genetically modified food, nutrition labelling, trans fats, prevention of cross-contamination, control of food temperature and Food Safety Ordinance.
