時令食品調查 - 盆菜含微生物的情況
Seasonal Food Surveillance on Microbiological Quality of Poon Choi

盆菜在冬至聚會中特別受歡迎,過往亦曾發生與盆菜有關的細菌性食物中毒,因此,中心今年繼續進行這項時令食品調查,為消費者及業界提供盆菜的食用安全資訊。
As poon choi is popular for gatherings during the winter solstice and there were previous cases of bacterial food poisoning associated with poon choi, the CFS continues to conduct a seasonal food surveillance project this year to provide relevant food safety information to consumers and the trade.

List of Small Volume Exemption Products

根據小量豁免制度,在香港每年銷售量不超過30,000件的相同版本預先包裝食物,可獲授予營養標籤豁免。有關豁免產品名單現已上載中心網頁。
Under the Small Volume Exemption (SVE) Scheme, prepackaged foods of the same version with annual sales volume in Hong Kong not exceeding 30,000 units may be granted with exemption from providing nutrition labelling. List of SVE products has been uploaded onto the CFS website.

食物安全巡迴展覽
Roving Exhibition on Food Safety

2015月年1月的巡迴展覽內容包括營養標籤、反式脂肪、有機食物、獸藥殘餘、天然毒素、雪卡毒素、食物安全五要點、控制食物溫度、及孕婦食物安全建議。展覽將設於紅磡海濱南岸(住宅)、黃大仙中心、九龍城街市及青衣長亨邨長亨商場。
The coming exhibitions will be held in January 2015. The venues include Harbour Place, Hung Hum (Residential), Wong Tai Sin Plaza, Kowloon City Market and Cheung Hang Shopping Centre.  Panels cover topics on nutritional labelling, trans fats, organic food, veterinary drug residues, natural toxin, ciguatoxin, 5 keys to food safety, control of food temperature and food safety advice for pregnant women.

香港首個總膳食研究:礦物質
The First Hong Kong Total Diet Study: Minerals

中心最近公布本港首個總膳食研究有關礦物質的結果, 報告評估香港市民從膳食中攝取硼、鈣、鈷、銅、鐵、鎂、錳、鉬、磷、鉀、硒、鈉和鋅十三種礦物質的分量,並與國際組織及國家機構的建議攝入量比較以評估相關的健康風險。中心提醒市民應增加鈣、鐵及鉀的膳食攝入量和減少鈉的膳食攝入量,亦建議業界應在預先包裝食物的營養標籤上清楚標示營養資料,並鼓勵業界在富含礦物質的預先包裝食物的營養標籤上標示出每種礦物質的含量。
The CFS has recently released the First Hong Kong Total Diet Study findings on 13 minerals, namely boron, calcium, cobalt, copper, iron, magnesium, manganese, molybdenum, phosphorus, potassium, selenium, sodium and zinc. Their associated health risks were assessed by making comparisons with the recommended intakes from international organisations and national authorities. The public are advised to increase the dietary intakes of calcium, iron and potassium and reduce the dietary intake of sodium. The CFS has called on the trade to clearly declare the nutrition information on the nutrition label for prepackaged foods and also encouraged them to declare the content of individual minerals on the nutrition label for prepackaged foods that are rich in minerals.

時令食品調查 - 臘味(第一期)
Seasonal Food Surveillance - Lap-mei (First Phase)

踏入冬季,不少市民喜歡在這時候吃臘味。醃製臘味常用的醃料包括鹽、硝酸鹽、亞硝酸鹽、糖和酒。製作過程也可能會使用其他食物添加劑,例如二氧化硫、染色料和抗氧化劑等。因此,中心最近進行了一項時令食品調查,為消費者及業界提供臘味的食用安全資訊。
"Lap-mei" (Chinese preserved meat) is getting popular with the approach of winter. Typical curing ingredients in the preparation of lap-mei include salt, nitrate and nitrite, sugar, and wine. Other food additives such as sulphur dioxide, colouring matters and antioxidants may also be used. The CFS has recently completed a seasonal food surveillance project on lap-mei to provide relevant food safety information to consumers and the trade.

「食物安全 – 高風險食物」講座
'High Risk Food' – Food Safety Talk

為回應世界衞生組織所訂立的西太平洋區域食品安全戰略(2011–2015),實踐為處理高危食物從業員加強食物安全訓練及教育的目標,中心將以「高風險食物」為主題。講座將以粵語進行,費用全免。參加者於講座後會以郵遞形式收到出席證書。
In response to the Western Pacific Regional Food Safety Strategy 2011-2015 of World Health Organization, the CFS will organise 'High Risk Food' – Food Safety Talk (talk). The objective is to enhance food safety training and education for food handlers engaged in handling high-risk food. The talk will be conducted in Cantonese and free of charge. Each participant will receive a certificate of attendance by post after the talk.

Food Safety Topics - Listeria and Home-made Salads

李斯特菌是在泥土和水中常見的細菌,身體健康的人在感染後只會出現輕微症狀或甚至沒有任何病徵;但對孕婦、初生嬰兒、長者和免疫力較弱的人,則可能構成嚴重的健康風險。易受感染的人士如想品嚐沙律,中心提出了一些自製沙律食用的安全建議。
Listeria monocytogenes is a bacterium commonly found in soil and water. Healthy people develop few or no symptoms when infected. However, it can pose serious health risks for pregnant women, newborns, the elderly and people with low immunity. For those susceptible groups, if they would like to consume salad, the CFS has offered some recommendations to them for preparation of home-made salads.

含生或輕度烹製雞蛋的食物沙門氏菌的情況
Salmonella in Food Commonly Containing Raw or Lightly Cooked Eggs

雞蛋營養豐富,是市民日常常吃的食物。用生或輕度烹製雞蛋製作的食物,例如窩蛋牛肉飯、賽螃蟹及意大利芝士蛋糕等都深受港人喜愛,但是雞蛋可能經由母雞的卵巢「直向傳播」或經蛋殼滲透「橫向傳播」而受到沙門氏菌污染。為評估市面上一些可能含生或輕度烹製雞蛋的食物受沙門氏菌污染的情況,中心與消費者委員會合作對有關食品進行沙門氏菌測試,藉以喚起市民和業界關注在製作有關食物時的安全問題。有關的研究結果已上載於中心網頁。
Eggs are rich in nutrients and are commonly consumed in Hong Kong. Food containing raw or lightly cooked eggs like steamed rice with beef and poached egg, crabmeat-style egg, tiramisu, etc. are very popular . However, eggs may be contaminated with Salmonella via "vertical transmission" through the ovary of the hen, or "horizontal transmission" through the shell of the egg. The CFS and the Consumer Council have conducted a joint study to assess the Salmonella contamination in food commonly containing raw or lightly cooked eggs in the local market and arouse public and trade awareness regarding the safety of these products during production. The findings has been uploaded onto the CFS website.

專項食品調查 - 即食食品含副溶血性弧菌情況
Targeted Food Surveillance on Vibrio parahaemolyticus in Ready-to-eat Food

副溶血性弧菌是一種可引起食物中毒的常見細菌,多見於海洋環境及海產。由這種致病菌引起的食物中毒,通常與進食生或沒有徹底煮熟的海產(尤其是貝殼類海產),或於配製時處理不當而受細菌污染的食物有關。有見及此,中心就即食食品含副溶血性弧菌情況進行專項食品調查,有關的檢測結果已上載於中心網頁。
Vibrio parahaemolyticus, often found in the marine environment and seafood, is a common bacterium that can cause food poisoning. Food poisoning caused by this pathogen is usually associated with consumption of raw or undercooked seafood (in particular shellfish); or improperly handled food that is cross contaminated with the bacteria.  In view of this, the CFS has conducted a targeted food surveillance project on Vibrio parahaemolyticus in ready-to-eat food. The findings has been uploaded onto the CFS website.

List of Small Volume Exemption Products

根據小量豁免制度,在香港每年銷售量不超過30,000件的相同版本預先包裝食物,可獲授予營養標籤豁免。有關豁免產品名單現已上載中心網頁。
Under the Small Volume Exemption (SVE) Scheme, prepackaged foods of the same version with annual sales volume in Hong Kong not exceeding 30,000 units may be granted with exemption from providing nutrition labelling. List of SVE products has been uploaded onto the CFS website.

Roving Exhibition on Food Safety

11月的巡迴展覽內容包括營養標籤、天然毒素、基因改造食物、食物安全五要點、反式脂肪及獸藥殘餘。展覽將設於南區深灣軒及葵涌安蔭商場。
The coming exhibitions will be held in November 2014. The venues include Sham Wan Towers in South District and On Yam Shopping Centre in Kwai Chung.  Panels cover topics on nutritional labelling, natural toxins, genetically modified food, 5 keys to food safety, trans fats and veterinary drug residues.

時令食品調查 - 大閘蟹
Seasonal Food Surveillance - Hairy Crabs

秋天是大閘蟹當造的季節,也是市民食蟹的高峰期。中心最近進行了一項有關大閘蟹的時令食品調查,為消費者及業界提供有關食品的食用安全資訊。
Autumn is the season for hairy crabs and there will be an upsurge in consumption during the period. The CFS has recently completed a seasonal food surveillance project on hairy crabs to provide relevant food safety information to consumers and the trade.

專項食品調查 - 即食食品含金黃葡萄球菌情況
Targeted Food Surveillance on Staphylococcus aureus in Ready-to-eat Food

金黃葡萄球菌是一種常見並可引起食物中毒的細菌。它廣泛存在於大自然,常見於身體健康的人的鼻腔、咽喉、頭髮及皮膚,並大量存在於傷口和受感染的部位。這種致病菌引起的食物中毒,通常與配製工序較多,食用前又無需再烹煮;以及在室溫下存放過久的食物有關,例如手撕雞、燒味和鹵味等。有見及此,中心就即食食品含金黃葡萄球菌情況進行專項食品調查,有關的檢測結果已上載於中心網頁。
Staphylococcus aureus is a common bacterium that can cause food poisoning. It exists widely in our environment and is commonly found in the nasal cavity, throat, hair and skin of healthy individuals. It presents in large numbers in wounds and infections. Food poisoning caused by this pathogen is usually associated with consumption of foods that require considerable handling during preparation but without subsequent cooking; and food stored at ambient temperature for a prolonged period. Examples are shredded chicken, siu-mei & lo-mei, etc. In view of this, the CFS has conducted a targeted food surveillance project on Staphylococcus aureus in ready-to-eat food. The findings has been uploaded onto the CFS website.

風險評估硏究 - 保質期長的預先包裝冷藏食品的微生物質素
Risk Assessment Study - Microbiological Quality of Prepackaged Long Shelf Life Refrigerated Products

李斯特菌病主要是因食用受李斯特菌污染的食物引致,大部分身體健康的人在感染後不會出現病徵或只出現類似感冒症狀。但對孕婦、長者和免疫力較低的人,則可能構成嚴重的健康風險。中心最近完成評估保質期長的預先包裝冷藏食品在保質期屆滿時的微生物質素,特別是李斯特菌的含量。有關的評估結果已上載於中心網頁。
Listeriosis is usually caused by eating food contaminated with Listeria monocytogenes. Most healthy individuals do not develop symptoms or only have flu-like symptoms. However, it can pose serious health risks for pregnant women, the elderly and those with a weaker immune system. The CFS has recently completed a risk assessment study on the microbiological quality, particularly the level of Listeria monocytogenes,of prepackaged long shelf life refrigerated food products at the end of shelf life. The findings has been uploaded onto the CFS website.

Roving Exhibition on Food Safety

10月的巡迴展覽內容包括旅遊人士食物安全建議、食物含丙烯酰胺、反式脂肪、營養標籤、雪卡毒素、有機食物及進食帶子和扇貝須知。展覽將設於元朗朗景臺 (住宅)、大埔倚龍山莊 (住宅)及深水埗保安道街市。
The coming exhibitions will be held in October 2014. The venues include Crystal Park in Yuen Long (Residential), Forest Hill in Tai Po (Residential) and Po On Road Market in Sham Shui Po. Panels cover topics on food safety advice for travellers, acrylamides in food, trans fats, nutritional labelling, ciguatoxins, organic food and take notice of eating scallops.

中心現正舉辦 2014 年度食物業界講座及「食物安全重點控制」工作坊,目的是透過連串活動,向業界推廣採用「食物安全重點控制」系統及在食物製造過程中實施「食物安全計劃」,以提升食物安全水平。
The CFS has been organising the 2014 Trade Talk and Workshop on HACCP to promote the adoption of the "Hazard Analysis and Critical Control Point (HACCP)" System and the development of "Food Safety Plan" in food processing, thereby enhancing food safety.

專項食品調查 - 即食食品含產氣莢膜梭狀芽孢桿菌情況
Targeted Food Surveillance on Clostridium perfringens in Ready-to-eat Food

由產氣莢膜梭狀芽孢桿菌引致的食物中毒,通常與未徹底煮熟的食物或已煮熟但放在不當溫度下貯存或長時間冷卻的食物有關。大量配製的食物,尤其是已煮熟的肉類和家禽,以及在烹煮後放在室溫下長時間冷卻的食物,均屬高風險食物。中心進行了專項食品調查以了解即食食品含產氣莢膜梭狀芽孢桿菌的情況。
Food poisoning caused by Clostridium perfringens is usually associated with inadequately cooked foods or cooked foods that are cooled for prolonged period or stored under sub-optimal temperature. Foods prepared in bulk, especially cooked meat and poultry dishes, and stored at ambient temperatures with a long cooling period after cooking are at high risk. The CFS conducted a targeted surveillance on Clostridium perfringens in ready-to-eat food in order to better assess the situation.
