風險評估硏究 - 本港售賣的壽司和刺身的微生物質素
Risk Assessment Study - Microbiological Quality of Sushi and Sashimi in Hong Kong

壽司和刺身是本地受歡迎的即食食物之一,但由於大部分都是生吃或混有生吃食物,而配製的過程可能涉及許多經人手處理的步驟,因此是高風險的食物。中心最近完成評估本港市面售賣的壽司和刺身的微生物質素,並概述壽司酸飯的酸鹼值。雖然是次研究中並沒有發現有食物安全問題的壽司和刺身,但免疫力較低的人、長者、孕婦及幼童患食源性疾病的風險較高,不應進食生或未經徹底煮熟的食物。
Sushi and sashimi have been among the popular food items in Hong Kong, but they are considered as high-risk food items because most are raw food or mixed with raw food and may involve manual handling during preparation. The CFS has recently completed a risk assessment study on the microbiological quality of sushi and sashimi in Hong Kong. This study also provided an overview on the pH value of acidified rice in sushi. Although no sushi and sashimi were found to have food safety concern in this study, people with weakened immunity, elderly, pregnant women and young children are at higher risk for foodborne illnesses and should avoid eating raw or partially cooked food.

Food Safety Report for June 2015

中心會每月公布「食物安全報告」,分析當月的食品監察結果,令市民可適時地獲得最新的食物安全資訊。
As a way to deliver the latest food safety information timely to the public, the CFS releases the "Food Safety Report" every month, giving an account of the food surveillance sample result analyses.

食物安全巡迴展覽
Roving Exhibition on Food Safety

8月的巡迴展覽內容包括營養標籤、有機食物、孕婦食物安全建議、食物安全五要點、殘餘獸藥、天然毒素、反式脂肪及控制食物温度。展覽將設於黃大仙慈雲山中心、屯門嘉悅半島(住宅)、大埔政府合署及元朗大橋街市。
The coming exhibitions will be held in August at Tsz Wan Shan Shopping Centre in Wong Tai Sin, the Sea Crest in Tuen Mun (Residential), Tai Po Government Offices and Tai Kiu Market in Yuen Long. Panels cover topics on nutrition labelling, organic food, advice for pregnant women, 5 keys to food safety, veterinary drug residues, natural toxins, trans fats and control of food temperature.
