風險評估硏究 - 保質期長的預先包裝冷藏食品的微生物質素
Risk Assessment Study - Microbiological Quality of Prepackaged Long Shelf Life Refrigerated Products

李斯特菌病主要是因食用受李斯特菌污染的食物引致,大部分身體健康的人在感染後不會出現病徵或只出現類似感冒症狀。但對孕婦、長者和免疫力較低的人,則可能構成嚴重的健康風險。中心最近完成評估保質期長的預先包裝冷藏食品在保質期屆滿時的微生物質素,特別是李斯特菌的含量。有關的評估結果已上載於中心網頁。
Listeriosis is usually caused by eating food contaminated with Listeria monocytogenes. Most healthy individuals do not develop symptoms or only have flu-like symptoms. However, it can pose serious health risks for pregnant women, the elderly and those with a weaker immune system. The CFS has recently completed a risk assessment study on the microbiological quality, particularly the level of Listeria monocytogenes,of prepackaged long shelf life refrigerated food products at the end of shelf life. The findings has been uploaded onto the CFS website.

已獲小量豁免產品名單
List of Small Volume Exemption Products

根據小量豁免制度,在香港每年銷售量不超過30,000件的相同版本預先包裝食物,可獲授予營養標籤豁免。有關豁免產品名單現已上載中心網頁。
Under the Small Volume Exemption (SVE) Scheme, prepackaged foods of the same version with annual sales volume in Hong Kong not exceeding 30,000 units may be granted with exemption from providing nutrition labelling. List of SVE products has been uploaded onto the CFS website.

食物安全巡迴展覽
Roving Exhibition on Food Safety

10月的巡迴展覽內容包括旅遊人士食物安全建議、食物含丙烯酰胺、反式脂肪、營養標籤、雪卡毒素、有機食物及進食帶子和扇貝須知。展覽將設於元朗朗景臺 (住宅)、大埔倚龍山莊 (住宅)及深水埗保安道街市。
The coming exhibitions will be held in October 2014. The venues include Crystal Park in Yuen Long (Residential), Forest Hill in Tai Po (Residential) and Po On Road Market in Sham Shui Po. Panels cover topics on food safety advice for travellers, acrylamides in food, trans fats, nutritional labelling, ciguatoxins, organic food and take notice of eating scallops.

中心現正舉辦 2014 年度食物業界講座及「食物安全重點控制」工作坊,目的是透過連串活動,向業界推廣採用「食物安全重點控制」系統及在食物製造過程中實施「食物安全計劃」,以提升食物安全水平。
The CFS has been organising the 2014 Trade Talk and Workshop on HACCP to promote the adoption of the "Hazard Analysis and Critical Control Point (HACCP)" System and the development of "Food Safety Plan" in food processing, thereby enhancing food safety.

專項食品調查 - 即食食品含產氣莢膜梭狀芽孢桿菌情況
Targeted Food Surveillance on Clostridium perfringens in Ready-to-eat Food

由產氣莢膜梭狀芽孢桿菌引致的食物中毒,通常與未徹底煮熟的食物或已煮熟但放在不當溫度下貯存或長時間冷卻的食物有關。大量配製的食物,尤其是已煮熟的肉類和家禽,以及在烹煮後放在室溫下長時間冷卻的食物,均屬高風險食物。中心進行了專項食品調查以了解即食食品含產氣莢膜梭狀芽孢桿菌的情況。
Food poisoning caused by Clostridium perfringens is usually associated with inadequately cooked foods or cooked foods that are cooled for prolonged period or stored under sub-optimal temperature. Foods prepared in bulk, especially cooked meat and poultry dishes, and stored at ambient temperatures with a long cooling period after cooking are at high risk. The CFS conducted a targeted surveillance on Clostridium perfringens in ready-to-eat food in order to better assess the situation.

9月下旬的巡迴展覽內容包括食物安全5要點、預防食物交叉污染、營養標籤、食物溫度控制及進食帶子和扇貝須知。展覽將設於東區北角政府合署及元朗錦田街市。
The coming exhibitions will be held in late September 2014. The venues include North Point Government Offices in Eastern District and Kam Tin Market in Yuen Long. Panels cover topics on 5 keys to food safety, prevention of cross-contamination, nutritional labelling, control of food temperature and take notice of eating scallops.

Seasonal Food Surveillance on Mooncakes

風險簡訊 - 蕨菜與致癌物
Risk in Brief-Bracken Ferns and Carcinogen

蕨菜是一類由Pteridium aquilinum品種的蕨及其多個亞種組成的蕨類植物,遍布世界多處。人類自古以來已懂得採摘蕨菜作食物和其他用途。由於從蕨菜中可分離出許多種化學物,其中的原蕨苷(ptaquiloside)是一種水溶性甚高的化學物,其可能致癌的特性令人關注。為減低食用風險,又鑑於香港市民並不常吃蕨菜,於是中心向消費者作出一些安全食用建議。
Bracken ferns are a group of ferns of the species Pteridium aquilinum and its numerous subspecies.  Bracken ferns are found in many parts of the world and had been harvested for food and other uses for centuries. Numerous chemicals had been isolated from bracken ferns, including ptaquiloside, a highly water soluble chemical, had aroused much interest as it may have carcinogenic properties.  Toxic chemicals were reported to be found in all parts of bracken fern.  To reduce the consumption risk of bracken ferns, which are not commonly consumed in Hong Kong, we have some recommendations to consumers.
